I'd go for Artist's Point or Flying Fish...as those are the only 2 I've been to but loved both dearly.
At Artist's Point I had the buffalo strip loin, cooked perfectly medium rare and the sides that typically come with the salmon, which were roasted marble potatoes (think multicolor mini fingerlings) and pinot noir beurre rogue. I love buffalo in general, but with that sauce on? OMG. I was smearing my meat in it, my potatoes in it, I asked for more bread so I could soak up every little drop. I don't eat salmon so I don't know how well that sauce goes with it (I'd imagine good) but it pairs perfectly with the buffalo as well. I would have poured it over ice cream it was so good. My friend also got the buffalo but had the sides that came with it, which were Black Diamond chedder Mac and Cheese and apple cider glazed brussels sprouts. She liked the Mac and Cheese but it had bacon in it and when I tasted it all I got was bacon flavor, and she loved the brussels sprouts and kept dipping them in my beloved sauce. She had the berry cobbler for dessert and I had the caramel apple torte. Both were awesome as they finally switched back to house made ice cream, which is the creamiest, smoothest, most flavorful ice creams I've ever had. Sometimes you'll read about crappy service on here, but I didn't find that at all, if anything the server was just a tad too attentive. I hate when they ask you how everything is before you can even take a bite. There was also really great dense sourdough butter to start off with butter that had a little bit of black sea salt on it. The bread was hot and the butter was soft, and the salt added just a little bit of mineral-y-ness. It was great.
We also went to Flying Fish, which was a first for me. Super cute themeing here, whimsical but not in your face. Again we started with the bread, which was a fluffy but not light wheat bread, and really for me as long as bread comes out hot I'm a fan. I went for the steak and potatoes, and again got a perfectly cooked steak and it was quite big. I ran into big steaks at most places I got it, and part of me thinks they're compensating for not having filet on most menus now. Either way, it was tender and juicy and fantastic. The potatoes were great as well, and it came with sauce Foyot but luckily they put in on the side because I didn't care for it. My friend got the potato wrapped red snapper, and honestly I can't remember what else came with it but I know she ate most of it and really enjoyed it. She said it was subtly flavorful and the fish was moist and the potatoes crispy. For dessert, she went for the trio which had a white chocolate almond creme brulee with an cranberry orange biscotti, a flourless chocolate torta, and chocolate bread pudding with dried cherries. I tried the creme brulee and that was amazing. I had the tequila-key lime "margarita" pie. Nice big serving which kind of surprised me, the pie was nice and creamy, it had these little swirls of sauce on the plate and they were full of tequila. The garnish was a salted lime slice and what I THOUGHT was chocolate shaving on a strawberry half....it wasn't chocolate, I found out the hard way it was big pieces of black salt. I just wasn't expecting salt on a strawberry so I'm sure my reaction was funny to watch.
Both were amazing meals though, and I'd recommend either. I'd say look at the menus and see what appeals to you. We were on the dining plan and used 2 TS credits on each meal, and didn't defer from what was included with the plan (no apps, no alcoholic drinks) just the meal and dessert and soft drinks, and they were both about $110 meals. Something to keep in mind if budget is an issue. Truthfully, a lot of the 1 credit TS meals we were having were around $80 anyway and if I were paying out of pocket I'd definitely still consider going to the signatures. Some people consider it a bad use of credits but that's up to them, I find them well worth it.
