Best place to get HATS

Mad Hatter Store seems to have the best collection of hats. They are located on Main Street and in Fantasyland near the tea cups.
 
Yea the Madhatter store on MS is pretty great. Another place we've purchased hats on numerous visits is at the World of Disney store in DD. On a multi-day visit, we often fly in the evening before our first day in the parks. So during that evening before we hang out in DD, eat dinner and shop and that's when we decide on a hat or headband that will be our special "statement piece" for that trip. It's a fun little tradition and since we go once a year there always seems to be some new hat available each time.
 
Hats have been my souvenir for a while now and the last few trips I've found unique ones at the Pioneer Mercantile. It's across from BTMRR, next to the shooting gallery. They sometimes have styles that I don't ever see in other park stores.
 

It seems that most stores have the same collection of hats. The Emporium has a pretty big collection.

My beef is that with my large dome, I can't buy those elastic "one size fits all" hat. They crush my head and give me a headache. They've had this cool blue hat with a yellow "D", but that darn elastic will just kill me.
 
go to the mad hatter in Fantasyland, less crowded, shorter lines.
...and look for the cheshire cat!
 
The Gag Factory - Toontown Five & Dime has a great choice and the embroidery machines.

In Tomorrowland, The Star Trader also has a good selection and embroidery.

In DCA, Seaside Souvenirs has a good choice in the Paradise Pier area.
 
For non-Disney interesting hats, try Chapel Hats in DtD. We've found some fun things there. They offer an AP discount, too.
 
The outdoor vending stand in front of the Sunset Showcase Theatre in DCA now has hats. I was surprised to see that they had the Peter Pan hat (was told in the Toon Town shop that only the Mad Hatter in Fantasyland had Peter Pan) as well as all of the unique Minnie Mouse headbands. It felt like they had a different selection than the two Mad Hatter shops. I like that it is less crowded than the Mad Hatter shops so I felt like I could take my time and try them on.

The outdoor vending shop near the Matterhorn also had some different hats then we had noticed anywhere else (the Tea Cups hat is all I can think of right now). Also the first shop in DCA has Oswald ears and his girlfriend's headband. They also had some other unique hats (train conductor and some DCA mouse ears).
