We have played all 4 course recently. Winter Summerland has 2 courses-- both are very cute with a Christmas theme (one wintry and one beachy). They are VERY easy-- there were probably 10-12 holes-in-one for each course for our party of 4! But cute and fun. Fantasia Gardens has one traditional mini-golf course (forgot it's name) which is pretty hard but very fun. The other course is the Fairways course. It has astroturf "greens" like a typical mini-golf course, but the holes are laid out like a real golf course with sand trpas and water hazards and so forth. This course was hard but we really liked it best.
As to which would be best for you-- hard to say. We are average to slightly-below average mini-golf players but found the harder courses to be the most fun. We really liked the Fairways course and will certainly play again when we are down in March. I would say you can't go wrong with any of them, but if you are looking for cute and easy, go for either course at Winter Summerland. If you are looking for cute but hard, go to the traditional mini golf at Fantasia Gardens. For a challenge, try the Fairways course.
