Caprese salad, made with fresh garden tomatoes. I also have a recipe around here somewhere for tomato pie which is outstanding with fresh tomatoes.

Hull out the zucchini the size of semi after cooking,, blend with boiled rice and Chard burger... that is not soft but has a texture ..do not scrape out all of the squash as the above contents will be in inserted back into the hull.. before inserting contents... sprinkle dry Parmesan cheese inside the hull..fill hull and top with shredded cheese..bake at your observations

These zucchini can be found in a free pile along any sidewalk garden

Best end of summer recipes?

I'll tell ya as we enter September.....our true end of summer. Right now, lots of burgers, dogs, sandwiches and going out for a nice cold beverages with friends.

I remember referring to it as 'doorbell ditch veggies'.

kind of along the same practice-stuff in the freezer that does not lend itself to non summer (outdoor) cooking. in our household that would be ribs, sausage (brats and such), burgers, briskit and pork roast (such that lends itself to smoked pulled pork). the nice thing about briskit and pulled pork is they both freeze well.

Time to make the ratatouille, gazpacho and eggplant rollatini.
My rosé and prosecco stash needs replenishing and at the end of the month it’s time to start making different types of broth/stock.

I'm thinking tomatoes too, and stone fruits. I just saw a recipe for a tomato galette (thick slice of beefsteak tomato on a puff pastry with Boursin cheese and fresh basil) so tempting that I'm inviting company over for dinner just to have an excuse to try it! I also picked up beautiful peaches and apricots at the farmers market yesterday so those will factor into dessert some how.

I simply cannot serve spring-mix salad between November and March. Cannot do it. And warm, hearty soups, braises and casseroles in July and August? Get out of here.
