You have gotten some great suggestions, but also some confusing information here. There are so many great places to eat in EPCOT that it's very hard to choose. Here's an overview...

In Future World you have:
Coral Reef - seafood and steak with a view of the aquarium at the Living Seas... some say the best dessert in WDW is here, The Chocolate Wave. We have eaten here the past 3 years and love it.
Garden Grill - family style buffet with typical American fare. This restaurant rotates very slowly as you eat and also contains characters.
In World Showcase you have:
Le Cellier - some say (myself included) that this is the best place in the parks to get a great steak. We have eaten here many times and their mushroom filet is the best I've had.
Rose & Crown - United Kingdom restaurant... fish n chips, bangers and mash, shepherd's pie, etc.
Chefs de France - very nice, bustling restaurant in the France pavilion. Food is delicious, great desserts, French waiters, beautiful pavilion. We have eaten here many times and love it.
Bistro de Paris - quieter French restaurant... less hustle, less crowded
Restaurant Marrakesh - Moroccan restaurant with very spicy dishes and belly dancing floorshow at night.
Teppan Edo - Japanese steakhouse where they prepare the food in front of you (think Beni Hana or Kobe). We have eaten here several times and it has always been good.
Tokyo Dining - Japanese restaurant serving tempura.
Tutto Italia - We ate here for the first time in September and really enjoyed our meals, although we found communication with our waiter somewhat of a problem. It is a beautiful restaurant in the Italy pavilion.
Biergarten - German buffet with floorshow of musicians dressed in traditional German garb playing a variety of instruments from accordions, to bells, to alpenhorns. We have been here many times... love the food here and the entertainment.
Restaurant Akershus - Norway restaurant, part buffet (cold board) and part menu. This is a lovely atmosphere and will feature the princesses coming to your table as you dine.
Nine Dragons - Chinese restaurant. Never been here.
San Angel Inn - restaurant inside the Mexico pavilion. To me this is the best atmosphere in EPCOT, but not the best food. As far as Mexican food goes, it is average (but then I live where I have a choice of about 20 mexican restaurants within 5 miles of my house... no exaggeration.) We end up going back again and again for the atmosphere... under night sky, foot of a volcano, beside a flowing river.

As for Counter Services, I agree with a previous poster who told you they like to eat their way around the World. The CSs at EPCOT can't be beat... far from being similar to McDonald's, they range from hamburgers... to fish and chips... to seared tuna salad... to panini sandwiches... to Moroccan fare... to Chinese, Japanese, or Mexican take out... to German bratwurst. All these will be at less expense than a TS, but it can add up if you do a lot of them.
And then there are the desserts... go to France or Norway and get a delicious pastry and fabulous coffee.
