Gosh, it's so hard to pick just one! We love, love, love our Epcot day because we don't have to stress and worry about ADRs. The counter services places are generally really good.
The CS at Norway is great. Lots of sweets (lefsa and school bread), but the sandwiches are awesome, too. Don't forget to grab a Carlsberg if you're drinking around the world!
We also enjoy the CS at Germany. Sometimes we share a brat; sometimes we share a pretzel. The seasonal beer has always been a hit, too.
Tangerine Cafe in Morocco is the gem, tho. The sandwiches are great, as are the platters. We usually opt for a sandwich since they're small and we're stuffed by then from sampling in Norway and Germany, but the platters are delicious, and you can get a bit more variety (couscous, hummus, tabouli, olives).
That's usually about it for us. We've tried the fish & chips in the UK, and we weren't impressed at all. I think we can get better at our local Long John Silvers. We're confectioned sugared out by the time we hit France (we love the sweets in Norway). I don't think Canada really has a CS, do they? I know we grab a Moosehead, but I don't recall there being any food options to go with the beer. And that's a real shame. Canada is becoming a huge foodie destination (in real life; not LeCellier), and I'm surprised they don't have a little CS area.
I've always been a little curious about that food court by The Land and Soarin. I'm not sure of the name of it. I don't know, tho. It really just looks like a food court which I can get at home at the mall.
The options for CS at Epcot are awesome
