Best bar?

Which kid's club will your son be at? I am probably the least "worry wort" parent on the DIS but I would not be able to go away from the general area where my child was. You really want to be nearby in case you get "the call". We got one from the Neverland Club (Poly) when we were at Victoria and Albert's (GF, next door). I was able to smooth things over with my DD over the phone but I would have hated to be literally at the other end of "The World" if I needed to run back for her.

He'll be at Sandcastle. Honestly, he's not a kid I worry about being there. He's young, but I'm still pretty confident. We have a casino in our home state and they have this loosely-supervised play area for kids while the adults go off and have a few hours of fun. We have never once gotten a call...he plays carefully enough to not hurt himself badly, and he doesn't miss us at all. Which sounds bad, haha, but less-supervised play with new kids of all ages and new things to do is so exciting that he wraps himself up in a fun-bubble and is happy as a clam until we return. I can't imagine he would get seriously injured, so barring that I don't anticipate hearing a peep about him! :)
 
This sounds like what we will probably do. I think we will end up going to Trader Sam's, and if we tire of it quickly we will come back and stop by AbracadaBar, perhaps catching IllumiNations after that

If you are having dinner somewhere in Epcot World Showcase, Trader Sam's is a good 30 - 45 minutes of travel time (walk to front of Epcot, wait for monorail, take monorail to TTC, walk/resort monorail to Poly), while AbracadaBar is a 10 - 15 minute walk. You may want to factor that travel time in as you try to decide what to do.

My DD was also pretty confident in that kind of situation which was why I was so shocked that we got "the call". I would still recommend that you stay close to your 5-year old DS at one of the Boardwalk resorts. The Blue Zoo over at the Dolphin is a nice bar. I stuck my nose into the AbracadaBar (we were eating at Flying Fish) and it was cute but I didn't think it looked particularly comfortable.

Just saying....What happens if your husband would like a more quiet romantic night with his wife in an adult lounge...(all of us men long for that you know pirate:).

I think where your son is, after dinner I would retreat to the Crews Cup at the Yacht club with my wife. And you really can't go wrong with just walking around the boardwalk, stopping at Abra, Ale and Compass, ESPN, Crews cup, etc... . You can also sit and enjoy a drink at the pool bars as well.
