we were out in a barn this mornign. second one is in a theater and then we're back to the barn again. brrrr.....cold......

Sweet Potato Soufflé


3 cups mashed (cooked) sweet potatoes
1-1/4 cups sugar 2 lg. eggs
1 Tbl vanilla 1 stick margarine
pinch of salt

Mix all ingredients, pour into greased baking dish, and cover with topping below.

1 cup brown sugar 1/3 cup flour
1 cup chopped nuts 1/3 stick margarine

Mix well and sprinkle on soufflé. Bake for 35 minutes at 350 degrees, or you can cook your soufflé 35 minutes and then cover it with marshmallows and lightly brown them for about 3 to 5 minutes. Watch carefully so you don’t over do and burn the marshmallows.

Luv, couldn't remember if you asked for a Candied Yams recipe or a sweet potato recipe so I posted both! Here's the other one coming right up!

Candied Yams​

2 lb. can of yams 1 stick of margarine
1-1/2 cups sugar 1 Tbl vanilla


Drain yams, leave about ¼ cup water, and arrange yams in pan. Put sugar margarine and vanilla over yams.

Bake at 375 degrees uncovered for about 30 minutes.
