Haven't been in a long time but I will weigh in on what I know.
Excited about:
1. Star Wars "land" or whatever it is. I have always been a huge Star Wars fan and love the idea of more SW rides and attractions.
2. Frozen ride - Not for me, but for my kids. I will deeply miss Maelstrom (read below)
3. Rivers of light - Sounds like it might be worth a gander.
Not thrilled with
1. Removing Maelstrom - I remember going on a trip with my family in the late 90s and happened to be wandering through Epcot on my own when I came upon this ride. I had no idea what it was but gave it a whirl. I can't tell you how many people I told about that. Anytime I knew someone was going to WDW I would make sure they knew about the ride in Norway. I also warned them about the wait they might experience when they get off...haha.
2. Three Caballeros ride in Mexico - I remember discovering EL Rio Del Tiempo and thinking it was a "romantic" little ride. Then when I went in 2007 and found they had altered it by making it obnoxious, I was annoyed. It really is not a quiet, relaxing and romantic ride now. It is goofy and out of place with the theme. They should have just built an all new ride rather than include characters that just don't belong.
3. Fastpass - I know...I'm crazy. Don't get me wrong...I will use FP+ when I go because it is necessary now. I used the old Fastpass when I was there last time. But, I am not a big fan of the concept in general. With the old system, I remember having to rush across the park in order to ride a specific ride within the time frame allotted. It went against the flow through the park that I have always followed. From what I can see now it seems you have to be EXTRA careful in planning your day out...with 3 FPs you can really mess with the flow. I guess we will see how it goes. But I think it's just obnoxious how these things have come along. The mindset I see from a lot of people is that they would NEVER wait in a line but only use FP or ride something with a 15 minute or less wait. While I understand that the park is very crowded and wait times can be long, I remember long wait times when I was there before FP as well. It wasn't uncommon when I was younger to see Space Mountain with a 45 minute+ wait. SOmetimes over an hour. We waited all the time. It makes me think of the movies. One of my best movie experiences came when I camped out for 17 hours to buy tickets for Star Wars episode I a week in advance (unheard of at the time to do buy in advance). There was a great time of hanging out with like minded people who all wanted to enjoy the same thing. With Episode VII, everyone just bought tickets ahead of time. Some theaters even offered the opportunity to reserve certain seats. THis meant that everyone just showed up and went in to the theater instead of standing there for hours with other people and bonding and having a great time! I made a couple of good friends in line. FP changes that.
