Any word of a menu at Belles Castle..??? And if its going to be a 1 DP credit or 2?

No, nothing has been released yet.

The only thing Disney has said so far about Be Our Guest is that 1) it will be CS at lunch and TS at dinner and 2) it will not be a character meal, at least not in the traditional sense with costumed characters.

Rumor has it that it will feature a small animatronic Lumiere( similar to Remy at Les Chefs) bt it will not be a character meal in the usual sense

We really don't have anything but rumors, but everything going around points to it not being a traditional character meal. As Disney has officially announced nothing but has let a few things "leak" unofficially, there's no way to really tell, but you should be prepared for there being no costumed characters.

There's also stories that although the animatronic Lumiere is pictured in the artist's rendition of the restaurant, it is not being constructed for the restaurant, but for a separate show or attraction. Time will tell as to which rumors pan out.

Late 2012 is all that has been officially announced. Based on all of the rumors, though, it seems like October is probable.
