being wishy washy and need help

I have never been wishy washy before when I make my reservations I stick with it. We are on the Deluxe Plan. But this time I am on the fence about some stuff. Here is what is currently booked:

December 30 arrive
Dinner- Crystal Palace
Then to the Contemp for Pirates and Pals Firework Cruise

December 31 - MGM Day
Breakfast - Chef Mickey "Ugly Early" Before 8AM
Lunch -Sci Fi
Dinner - Prime Time

Jan 1 AKL Day
Breakfast - Tusker House
Lunch - Yak and Yeti (still not positive)
Dinner Hoop De Doo Review

Jan 2 MK Day
Breakfast - CRT - before the park opens. This is one I had to talk to a person for so I didn't jump the gun on it.
Lunch - Counter Service
Dinner Whispering Canyon

Jan 3
Breakfast - ???
Lunch Les Chefs de France
Dinner - Kona (this was one of Phil's requests)

Jan 4
We are going to Universal this day. We are all excited to check out Harry Potter.

Jan 5
Breakfast Akershus
Lunch?
Dinner - California Grill
Drew will be going to Neverland Club and we will have an adult dinner.

Jan 6 (this will probably be a down day until evening)
Breakfast Waves?
Lunch - snacks
Early Dinner at Brown Derby for Fantasmic

Breakfast - possibly 1900 Park Faire (?) Not one of my fave character breakfast

Dinner - Coral Reef

I am now looking at moving cancelling Coral reef and moving Kona to the 7th. And then doing the Yahtsman to Jan 3. Then I realized I had breakfasts open and maybe I should move Whispering Canyon to breakfast on the 6th or 7th and opening up another opportunity for dinner. but I can't decide where to go. We have plenty of credits if we choose a signature meal for that night. Suggestions would be great. I have never had this problem.
 
Would love to be there as long as you will be!!! NYE day is going to be extremely long for you with the early breakfast..do you have kids? We have been to wdw for the last 5 xmas weeks (3 NYE) and I think your choice of DHS for NYE is great..but do not plan on park hopping. If you are staying for midnite...its a very long day! We were at DHS at 9:00am last year on NYE and toured without any problems until we left at 2pm then went back to Dolphin, hung around BW, ate dinner at Kouzinna and then watched fireworks at Epcot and DHS from the dolphin and we were back in our rooms by the time most folks were walking to the trams. Previous years we stayed the whole time until last fantasmic on NYE then left to watch fireworks from BW area, also.
We love having breakfast at 1900PF(did this 2 xmas mornings and one new years morning) I think it is the best food at the character breakfasts(lobster eggs benedict-yummm) and love the mad hatter). Also have a new favorite in The Wave(although it was dinner not breakfast, but really love the restaurant and service).

Good luck finalizing. We will be there 12/26-12/30 so we will miss NYE, but will spend it at HHI on our way home to Boston.
