Baked Brie?

I want to do a baked brie for Christmas. Any one have any easy recipes for this?

Bake till gooey. Serve with any number of toppings- raspberry jam, salsa, chutney...very easy. Some people like to wrap it in a pastry, but i think it's unnecessary.
 
I love brie, but I have to be really careful with it because I have immune issues. I usually remove the top, bake it until melted and then top it with chutney or stewed apricots and serve it with crackers. This is another good recipe - Bloomin' Brie
 
My daughter does an amazing thing with Brie and pears. I'll give her a call tomorrow and if she's home I'll post the instrux. She made it when she was home for Xmas last year and it was sooooooooo good. If I remember correctly, it was really easy.

I forgot to mention, I put the brie in the freezer for about an hour before I cut the rind off. It's a lot easier when it's really cold.
 
my sister makes this at Christmas...she uses Phillsbury Crousant dough but doesn't break it into individual croussants but makes one big one with the brie and raspberry jam in the centre...yummy....sorry about spelling mistakes...it's getting late for me.....
 
I usually "skin" the top, cover with slivered almonds and put in the microwave until it is all "melty" . I don't care for brie, but this is always a hit. The nice thing is that when it starts getting cold, you can put it back in the microwave. The fruity toppings don't stand up to the microwave for reheating.
 
My MIL makes baked brie, and I've adopted her recipe. You open a wheel of brie and put it in an ovenproof dish, cover with sliced almonds, and pour on a shot of Kahlua. Bake until the almonds are toasted, about 10 minutes.

It's got a hint of sweetness, and the Kahlua makes a rich glaze over the brie. It is SO good, and I have never made an easier baked brie.

This is the one I made for Thanksgiving.

Praline Brie:

Cut off the rind, wrap in refrigerated crescent roll dough, top with brown sugar and pecans, bake till dough is golden brown and cheese is gooey. YUM!
 
Saute some walnuts in a little butter

Roll out a puffed pastry sheet by about 2 inches each way. Place brie in the center top with nuts, Then add about 1/3 cup of raspberry jam best you can afford, Then wrap it all up.
Brush the top with egg and bake 350 for about 20 minutes or until golden.
 
put the wheel on a greased piece of foil in a low pan. Top with toasted pine nuts and drizzle with honey. Bake at 350 until it looks done, but before it starts running out. So easy and so popular. (I do not take the rind off. Just cook as it comes)

We do something similar. Cut off top of brie, add layer of orange marmalade, sprinkle brown sugar, add a shot of Kahlua and almonds. Bake until the cheese has softened and is a little jiggly. Serve with sliced french baguette.
 
I think I need to run to the store!! These sound SO good. We are having DH's family over today.
 
Everyone loves the baked brie I serve. The recipe is on the Martha Stewart web site. Its made with puff pastery, nuts, and brown sugar. It is the best!

How can you tell when Brie has gone bad?

A month ago was the first time I bought some 'fancy' cheese from my local grocery store. I bought Camembert cheese and the Brie, but the Brie had a smell and taste like...uhhh...hard to describe....ummm... a home perm kit ? :scared: so I chucked it... I cut that rind stuff off too, but the innards tasted like that..Is that the way it supposed to taste..:crazy2:
 
Brie needs to be served warm, even if you just put it in the microwave for a few seconds.

The first time I had it I thought it tasted like floor paste wax. I've sense learned that was a bad brie. It is so good. If it tasted yucky, it probably wasn't a good one.

The rind does smell like ammonia. I don't know how people eat it. It burns my nose. The inside shouldn't smell (or taste) like that though. It must have gone bad.
