My MIL makes baked brie, and I've adopted her recipe. You open a wheel of brie and put it in an ovenproof dish, cover with sliced almonds, and pour on a shot of Kahlua. Bake until the almonds are toasted, about 10 minutes.
It's got a hint of sweetness, and the Kahlua makes a rich glaze over the brie. It is SO good, and I have never made an easier baked brie.

How can you tell when Brie has gone bad?
A month ago was the first time I bought some 'fancy' cheese from my local grocery store. I bought Camembert cheese and the Brie, but the Brie had a smell and taste like...uhhh...hard to describe....ummm... a home perm kit ?so I chucked it... I cut that rind stuff off too, but the innards tasted like that..Is that the way it supposed to taste..
