Bad cook needs a suggestion for dinner

OP, I don't wish to offend you, but here is my quick and easy chili recipe:

Chili con carne
1. fry 1 lb. ground beef in a frying pan, breaking up the meat
2. chop up one cooking onion, add to the frying pan with the ground beef, fry until the onion is transparent
3. mince 1 or 2 cloves of garlic, add to the frying pan with chili pepper to taste, and fry 1 min.
4. add 1 large can of diced tomatoes (or cut up whole canned tomatoes), stir everything together in the frying pan
5. drain 1 can of red kidney beans, rinse with cold water, drain again then add to the frying pan
6. simmer until you have the consistency you want, taste and adjust seasonings (you may want to add chili pepper, salt, pepper, tabasco, worcestershire)
7. optional: serve with a bowl of grated cheddar on the side
Serve with a green bag salad with vinaigrette dressing, and toasted garlic bread.
 
SUPER EASY roast beef

Get a CHUCK roast from a good source (meat market if you can)
get a bottle of McCormack's Steakhouse seasoning in the grinder-spice section at the grocery store

Season beef liberally with the spices from the grinder, place in a frying pan or other pan that is safe in the oven , covered. Turn on the oven to 250 degrees and cook for 4-6 hours (smaller roast, closer to 4 hours). It will literally fall apart it is so tender and the seasoning gives it a good flavor.

I usually make mashed potatoes and gravy but gravy can be tricky so put some baked potatoes in the oven with the roast OR peal and cut up some potatoes and add them to the roast with about an hour to hour and a half left of cooking time. The juice from the roast will flavor the potatoes for you. You can also add carrots and onions if you want.

This LOOKS like it is hard to make but it is SIMPLE and tastes very good.
 
OP This recipe is very easy.

6-8 Boneless chicken breasts
Place chicken in bottom of an ungreased casserole dish. Top each piece with a slice of Swiss or Mozzarella cheese. Take one can of cream of chicken soup and 1/2 can of water or white wine (I use wine) and mix them together and pour over the chicken. Melt one stick of butter and mix it with one package of Pepperidge Farm Stuffing Mix (7 oz package). Pour the stuffing/butter mixture over the chicken. Baker uncovered at 350 degrees for an hour. It's, obviously, not the healthiest recipe, but it will taste good, it's easy and you can't really make a mistake.

You could serve this with a rice pilaf (just buy a couple of packages in the grocery store - simple). Serve with fresh green beans or fresh carrots. Just steam them and put butter on them - they will be good.

If you want pasta, this is a really easy and delicious recipe for baked ziti. It's from the Food Network site.



Ingredients
Salt
1 pound ziti
1 pound hot Italian turkey sausage, casing removed
1 medium onion, chopped
3 cloves garlic, chopped
1 (28-ounce) can diced tomatoes
6 ounces pesto
15 ounces ricotta cheese
1 (9-ounce) package washed spinach
Butter, for baking dish
2 cups shredded mozzarella, plus more for topping
1 1/2 cups grated Parmesan, plus more for topping
Directions
Preheat oven to 375 degrees F.

Bring a large pot of salted water to a boil over high heat. Add ziti and cook until al dente. Drain in a colander.

In a large skillet over medium heat, saute turkey sausage. Add onion and garlic and saute until the sausage is cooked through. Use your spoon to break up the sausage while it cooks. Add the can of diced tomatoes and pesto and let simmer for 10 minutes.

Add the ricotta cheese, spinach, Parmesan and mozzarella to a large bowl, and stir to combine.

Butter a 4-quart baking dish, add the cooked pasta, then sausage mixture and cheese mixture. Top with a sprinkling of mozzarella and Parmesan.

Bake until completely heated through and golden and crisp on top, about 20 minutes.
 

Another VERY SIMPLE to cook main dish is chicken breasts marinated in Kraft Zesty Italian Dressing and grilled. You can bake the chicken too (350 for 20 minutes) but it is better grilled.

Again, pop some potatoes in the oven to bake (poke holes in them in a few places with a fork and cook at 400 for an hour)

Get some good frozen veges and something for desert and you are set.
 
Another one-I know there are a lot of ingredients but this is REALLY easy. I DO NOT take stuff out of the pan to cook each new item as it says. I start with the bacon, move it to one side, add beef, move it to another side, etc. We also just cut up potatoes and have them cook with the rest of the stuff. The recipe says it feeds 6 but it is more suited to 3 or 4:

IRISH BEEF STEW

* 1 TB. oil
* 2 strips bacon, cut into 1/2-inch pieces
* 2 lbs. stewing beef, cut in 1-inch pieces
* 1 large onion, chopped
* 2 TB. flour
* 2 carrots, sliced
* 12 large pearl onions
* 11/2 Cups beef stock (or 11/2 Cups water + 2 tsp. BEEF SOUP BASE)
* 1 bottle dark stout beer (Deborah uses Guinness) :thumbsup2
* 2 TB. dark brown sugar
* 2 TB. red wine vinegar
* 1/2-1 tsp. salt, to taste
* 1/4-1/2 tsp. PENZEYS FRESHLY GROUND PEPPER, to taste
* 6-8 cooked small red potatoes for serving, if desired





In an ovenproof pot, heat the oil. Add the bacon and cook until crisp. Remove the bacon to drain on paper toweling. Do not discard the bacon drippings. Return the pot with the drippings to the heat. Add the beef and brown evenly; remove the beef and set aside. Add the chopped onion and flour to the pot and cook for 2-3 minutes; be careful not to let it burn. Return the beef and bacon to the pot and add the rest of the ingredients except the potatoes, if using. Bring to a boil, cover and simmer, stirring occasionally, for 90 minutes. Taste and add more seasonings if desired. Add a potato to each diner's bowl and ladle stew over it.

Prep. time: 15 minutes
Baking time: 1 hr. 45 minutes
Serves: 6-8

It's one of those tried and true recipes from a collection of home cooks. You know, a book put together by the public library of everyone's favorite dishes. These recipes are not really modern or the healthiest, but they taste good and they are simple.
 
I have always had good reviews with this - don't know how "fancy" you need to get though.

Chicken quesadillas

1 rotisserie chicken
1 can of sweet corn
two cups of cheddar (or colby or monterey jack - whatever you prefer)
half a cup of sour cream
can of green chilies
fresh cilantro
salt/pepper
large tortillas

remove chicken from the bone and chop into even sized pieces. Throw in large bowl. Add everything else and stir together. Take a large tortilla and put a verygood sized spoonful of mixture on half the tortilla. Fold over.

I use a tiny bit of butter in my frying pan but you can use anything for non-stick/browning purposes. Once tortilla is browned on one side flip to other and make sure all is melted. You can keep finished ones in a warm oven while completing the process til mixture is gone.

You can serve with salsa and/or guacamole and a nice green salad. Maybe a Spanish rice. Pretty simple but tastes very good.
 
Brown ground beef, add jar of Prego, pour over favorite pasta. Doesn't get any easier than that. You can even do sauce ahead of time a leave in crock pot.

I was going to suggest something very similar. There aren't any guys I know who don't love spaghetti with meat sauce. This is how I do it:

Brown about 1 to 1.5 lbs. of ground beef and de-fat it (to de-fat, put cooked meat in colander and rinse well with EXTREMELY hot waer).

Put meat in crockpot.

Add one jar of Ragu original (the big jar...not the small jar).

If you like, you can also add some sliced onions and mushrooms.

Add 1/4 cup of sugar (sounds weird, but trust me).

Add one basil leaf.

Mix well, and cook this on low for 8-10 hours in the crockpot. Fish out the basil leaf and toss it (I usually forget, and my kids always find it in their sauce at the table, ha).

Spoon over prepared pasta, and voila! You can serve this with purchased rolls, and a bagged salad, and you are good to go! Oh, and don't forget ice cream for dessert.

Last week I made some pork bbq that was really good. Easy peasy. I got a pork tenderloin, put it in the crock pot set it on low for the day. I dumped 1/2 of a large bottle of Sweet Baby Ray's BBQ sauce (Original) over it. Later during the day I dumped some more sauce over it. About a half an hour before it was ready to serve I shredded the pork poured in a little more sauce and it was great!

I made cole slaw using lite bottled dressing and slaw salad mix and we had Bush baked beans with that. We had nice big buns for the bbq. Everyone loved it! We hadn't had bbq in awhile and it was a nice change.

We also had a made a blueberry crisp that was pretty good and easy too. I used frozen blueberries and a pre-made low sugar crisp mix.
 
I am no cook either, but I have a really good recipe with only 3 ingredrients:

Put an english cut roast in a crock pot.
Sprinkle a packet of dry onion soup mix (like Lipton) on top of the roast.
Pour over that a jar of beef gravy.

I turn it on low before I go to work in the morning, and when I come home in the evening, dinner's ready.

I like to serve it with buttered egg noodles, which take about 10 minutes to cook.

Really easy and really good!
 
well, I'm a bad cook too - I can only cook very simple foods. If it were me, I'd get some nice porterhouse steaks at the butcher and grill them. Mashed or baked potatoes, a veggie (greens beans in garlic would go well), and a salad. Add some kind if bread of you want to be fancy (that would be fancy for me).

Yes he does...We will be married 20 years this spring. I gave up a long time ago making a meat sauce... I just may try it again and see what he says!!
