Thanks for everyone's recommendations. Given our schedule, looks like we will have one and a half full days in the park. On day 1, we will rope drop the Studios, on Day 2, we plan to do EMH at the Park.

The best area for rope drop is NOT from the main hub. If you go through Liberty Arcade, which is to the left of Main St, come out the other end and you'll be just behind Casey's. There is a small covered walkway here which leads into Frontierland and will have a smaller number of visitors waiting to get into Frontierland at rope drop. Even if you're not there for rope drop, this is by far the quickest route to Frontierland so if you'll be there later, make this your first destination to get fast passes.
If we are doing EMH, do you have any recommendations on how to position ourselves to get onto Big Thunder Mountain Railroad before the crowds? Is it the same recommendation to do the area behind Casey's or does EMH allow us closer access to the ride.

Do any of you know if it is feasible to go from Star Wars: A Galactic Celebration (19:45) to Dreams (published closing time of Disneyland Park is 21:00)?

Yes, re btm. Hi behind Caseys, Liberty Arcade. A CM will be there.

EMH you can meet characters around town square or just head straight up main st, through castle and into fantasyland. The discoveryland. You'll have it done with plenty of time to spare and head to rope drop for 9:45ish.

Yes to Star Wars. Don't stand too close to the stage for this, great view further back outside Cinemagique. It lasts approx 15 mins, then leave Studios and head to Disneyland Park. It will be busy but you'll have plenty of time. You'll get a good view of Dreams pretty much anywhere, of course right in the centre of the hub is best. We've watched from either side too and it's been just as good.

We ended up getting one night at Hotel Santa Fe on hotels.com. It was much cheaper than any package deals I could get on the website ($126 USD/night). We then got 2 sets of the magic 1 day/2 park special tickets (which were cheaper than the 2 day park hopper they sell).
