Do the pools and other activities in the resort shut down at a certain time in the evening?

Yes, the pools close relatively early, usually around 8pm. They have this information on the Aulani website if you want to keep updated.

And seemed like the lazy river usually shut down even before the pool?

Just returned from a 3 night stay, the lazy river and slides close at 6:00pm. Main pool, Kamaka grotto, and adult pool close at 8:00. I'm not certain if the adults only infinity hot tub closes later.
