I took a trip with my then-three-year-old son on Labor Day weekend, back in '02.
I was worried about being miserable from the heat, but we did fine and had a great time!
Wear no denim; I wore nylon shorts like the kind you can wear over a swim suit. That way, I could get soaked in the fountains along with my baby and dry out again over and over if we wanted to! Also they are just very cool.
Wear open sandals; I had waterproof Teva sandals, well-worn-in. I can't imagine being in socks in the heat. Your mileage may vary.
Wear sleeveless shirts in light colors.
Wear a hat and sunglasses. I never was a believer in hats until this trip. Keeping the sun and glare off your face helps a lot!
Wear really high SPF sunscreen and slather it on a couple times a day. It not only kept us from burning, I swear it keeps your body cooler to not have that UV going into you.
2-4-6-8 Everybody Hydrate; I borrowed a "Camelpak" hydration backpack from a bicycling friend and wore it. The water on my back stayed nice and cool (kept the refilled bladder in the fridge overnight and that was great!) and kept my back nice and cool, too. Sipping a bit of water every twenty minutes or so made a huge difference in my energy level out in the heat.
Keep to the shade when you're walking when you can, and even better, walk through shops with a/c where you can.
Discover why Hall of Presidents, It's a Small World, Carousel of Progress, and all the movies in Epcot are the best summertime attractions.
Enjoy!
