Hi Laura (AuntyBrat),

I was just perusing that "other" website and see you are from Highland! My dear grandma and one of my brothers and his wife live in Highland! We were in Redlands yesterday for Thanksgiving. Anyway, small world! Perhaps one day we could meet for lunch prior to the cruise. My grandma likes Kay's Cafe...that hole-in-the-wall breakfast place, HA! But there's always the better restaurants on Hospitality Lane.

BTW, we have two FBI agents in our family if you need any extra info. in your quests for The Sisterhood as our "Director of the Sisterhood Bureau of Investigation", lol!!!

Ship of Fools Sweet Potatoes

· Two (2) 40 oz. cans of sweet potatoes (or close to that amount)
· 8 eggs
· 8 tablespoons of cooking Sherry
· 12 tablespoons of melted butter
· 8 tablespoons of brown sugar
· 2 teaspoons of cinnamon
· 4 teaspoons of baking powder
· 1 bag of small marshmallows

Combine all of the above ingredients except the marshmallows – mash and then blend with a mixer until smooth. Place in to two (2) 8 X 8 – glass casserole dishes. Add the marshmellows. Bake in a preheated oven at 350 degrees for 30 minutes, but check as you go to make certain the marshmallows are not burning! (That is for Estelle, ;) ) Also, it’s best to place a cookie sheet under these as the marshmallows sometimes edge over. Enjoy! (You may also use fresh sweet potatoes).
 
Scratch, my kids love this broccoli recipe!


Broccoli Recipe(from Andrew Weil, M.D.'s book - 8 Weeks To Optimum Health)

1 large bunch broccoli
1 tablespoon extra-virgin olive oil
salt to taste
several cloves garlic, chopped(I use minced garlic for its ease!)
red-pepper flakes to taste(We like this, too spicy for the kids.)

1. Trim the bottoms of the broccoli stalks and discard. Cut off the main
stem of each stalk, peel it to beneath the fibrous layer, and cut the flesh
into edible chunks. Separate the head of broccoli into bite-size pieces
and peel a bit of the skin from the small stems to make them more
tender.(***Barb's note - I just use broccoli crowns and cut them up -
easier for me!!!)

2. Wash the broccoli in cold water, drain it, and place in a pot with 1/4
cup cold water, the olive oil, salt to taste, and the garlic. Add a pinch
or more of the hot red-pepper flakes if you want a spicy dish.

3. Bring to a boil, cover tightly, and let steam until the broccoli is
bright green and very crunch-tender, no more than 5 minutes. Remove with a
slotted spoon and serve at once. You can also add the broccoli(with any
remaining liquid) to cooked pasta(Dr. Weil prefers penne or rigatoni),
seasoning with grated Parmesian cheese if you like(This is not needed at
our house, already tasty! )
 

My SIL sent me this...she raves about this recipe. Admittedly, I'm a good cook when I cook, but I haven't tried this one.


Broccoli Salad
6 Cups broccoli
1 diced medium red/purple onion
1 1/2 Cups dry roasted peanuts (I use about 1 1/4 or 1 cup)
3/4 cup raisins (I use the golden raisins and a little less than 3/4)
1 diced red pepper

DRESSING
5 TBS Vinegar
1 Tsp dry mustard
1/2 cup oil
1 Tsp celery seed
1/2 Cup sugar Mix all together...it fits in a salad caraffe(SP?)

Okay if we are doing veggie things to encourage DKs to eat them I'll throw in ours.
Our DDs never ate anything that was green. Got that from their mother. Until they were at a neighbors house. They came home raving about Spinach salad.
It is very simple.

Either one bag of spinach or a bunch or two of fresh spinach. Wash thoroughly and remove the main stems. Cut the leave up into bite sized pieces.
Put in salad bowl. Grate a block of Cheddar cheese. I use the one that comes in a block that looks like a large stick of butter.
Sprinkle this on top of the Spinach. Next add bacon bits ( mine comes from a Jar) . Toss the salad well. You can use any kind of dressing although I prefer either oil and vinegar or hot Bacon Dressing. We usually let those eating the salad pick their favorite. Top with croutons.

The kids love it and it is really good for them and you. Unfortunately there are no marshmellows.

Thanks for all the veggie recipes - they sound yummy!

Problem in our house isn't getting Lara to eat broccoli - it's Martin!:rolleyes: He claims even the smell of it makes him nauseous, so we have to plan it for when we know he'll be really, really late :jester: or just have it in restaurants where he can't complain! (This also goes for cauliflower, cabbage, asparagus, and a couple of others he doesn't like.) Green beans, peas, carrots and corn are the only acceptable veggies.

As for sweet potatoes - one small spoonful, and then he feels "sick" :rolleyes: I love your recipe, though, Barbara. Would it work if the quantity was cut in half??? (I know some recipes don't work if you do that).

went to MGM,,,crowded!! TOT was 70 mins, RnR was 80 mins,..went on few rides and then got fed up and went back to hotel and swam in SAB...

Didn't get to see Bob (Izzi) but my DH spoke to him on the phone this afternoon and he said he was fed up too with the crowds in MK and was leaving....seems more crowded today than yesterday!!

getting to go dinner in a few...

Went to EPCOT this morning, not bad crowds and am waiting for my bro and sis in law and kids to get here and will spend the entire day with them.

Beautiful weather here...high 70's.

Kathy: A heads up -- we bought our one-way tickets from Orlando to Philly back in October the day the fares opened up. We got flights for Saturday, 9/3, leaving at 12:20 p.m. for $79/pp. However, I checked them again two weeks ago and the one-way fare has jumped to $255/pp! I had to do it three times to make sure I put in one-way and not RT. I've never seen airfare jump like that in just a two-week period. They must have caught on to the popularity of flying back from Orlando that day. In checking again this morning, it seems that the only cheap fares ($120/pp) are the ones in the morning. It might be cheaper to stay overnight Saturday and leave Sunday morning. This is US Air -- there might be cheaper flights still available on other airlines, however. Oh, I did find one for United that leaves at 3:30 p.m. that is only $130/pp.

Oh yes Arlene, you can cut the sweet potatoe recipe in half...my apologies. That is a doubled recipe for my very large extended family...oops!

Have fun at Epcot Melinda!!! Are ya' getting excited to board tomorrow? Have you been on the Wonder before?!
