Are you familiar with this food?

OMG!!! I LOVE this--it is my favorite thing my gramma makes. I finally learned how to make it myself.
First I make a white sauce (big pain in the butt), flour and oil, stir and stir and stir, adding milk, then adding cut up pieces of Carl Buddig or Land o Frost beef (ham works if they are out of beef), then add Worcestshire sauce and pepper.
I serve it over English muffins or toast. And my DH hates it, so I have to eat it all myself! Darn! :)
Yes, it is fattening and has no redeeming nutritional value but it is my definition of comfort food.

My mother eats it. She doesnt make it, but she gets the stoffers frozen kind that you just have to heat up and put it over toast. shes says its good.
I like the Stouffers as well but put it over rice instead of toast. I always loved the chipped beef but hate soggy toast.

I just melt a stick of butter in a pan and shred up the beef and toss into the pan. I let the beef cook a bit to heat through. I then add 1/4 cup of flour right to the beef in the pan. I stir it up and let it cook with the beef so that the flour taste cooks out. I then add 3 cups of milk to it and cook on low til thick, adding more milk if necessary. Serve over toast.

Had it for dinner - over rice.

I grew up eating it over toast for breakfast. My college roommate introduced me to it over rice. Not bad - especially since I'm not a morning person.

Roy Rogers restaurant serves it for breakfast over biscuits. YUMMY!

I really enjoy chipped beef but I haven't made it in years. It was such a cheap dinner for us that we often ate it during the lean years, lol. I wonder if my dd will remember that dish? Humm, I think I'll make it next week just to find out, lol.

It is on a lot of menus in our area. I love to make it but will only use the Eskay brand of dried beef. It is a very popular dish around here. I remember being at the butcher shop a few Saturdays ago and they were sold out of dried beef. We like to make it when we go on vacation but we can't always find the dried beef in the deli section. I noticed that the farther south I go the harder it is to find. The store clerks said they had never heard of chipped beef gravy...the only dried beef they had was in the jar and said most people by it to make dip or cheese balls. My mom used to also make hamburger gravy but isn't near as good as S.O.S.

The Stouffer's stuff isn't bad in a pinch, but have you noticed that the beef in it is sort of "fake" as compared to when you buy the beef yourself and make it. It is just kind of different and not as good as making it on your own (but close).

It's funny that a lot of you recall this food as being used during the "lean times."

We consider Cream Chipped Beef over toast a luxurious breakfast!! I've never eaten it for any other meal.

I love creamed chipped beef! My husband and I were in an historic area near where we live, they have lots of small antique shops, etc. We stopped in for lunch one Sunday at one of the Cafes there and they were having it as a brunch special. I couldn't believe it. It seemed kind of out of place in the restaurant we were in. But I got it and it was great!!

I love this. My mom used to make it as a treat, and I miss that since she's been gone. I do eat the Stouffers' one, and have had Schwans, but nothing is like the homemade kind. The diner in town has it as a breakfast special once in a while...yum!

I just have to say--four pages of responses over SOAS! How funny! I bet the OP never expected this type of response. :cool1: :cool1:

I grew up in PA, and my mom used to make it frequently. As a child, I did not have any use for this food - it was usually a Saturday night meal w/eggs, and such. Years later, I decided to give it a try, and much to my surprise liked it. I too will eat the Stouffers (haven't in a long time.... hmmm to they have it here i FL? Good question!)

We use to have this alot when I was little. I believe it came in a glass container that my mother saved and used as juice glasses. I think I have some up in my cupboard. I just asked DH and he said yes we do and he pulled one out. Oh the memorys of chipped beef.

ewwww ewwww ewwwww..I can't say I ever saw it on any menu anywhere....I thought they only fed people that in prison or the army!

My Mom made it all the time when we were growing up. I wasn't a big fan of it but did try making it a couple of times for my DH and sons. It didn't go over well.

Yep, but I was introduced to it in Maryland. My dad and stepdad talked about "SOS" a lot and I'd never had it until my employer had it on their menu.

It's really good on pancakes! That's how we'd serve it-the stouffers packaged variety. some people would order it over homefries.

My Mom made it for breakfast when we were little. She used the dried beef out of a jar. YUM!

Had it all the time when I was little. It comes in a jar and you find it near the canned tuna, chicken, ham , etc... It is made by armour. Super easy and kids love it.

Wow! You guys are great! Thank you all for taking the time to respond.

I've only tasted the Stouffer's frozen kind, but my husband remembers having it years ago - and not frozen. He just can't think of where he remembers it from. From your responses, though, I think he must be familiar with it because his dad was in the military.

Thank you for the recipes you shared. I plan to try them.
