are the fast pass + times pretty accurate

Hi: Just did my 3 fast passes selection. I have a fast pass for 11-12 for journey of the little mermaid and a lunch reservation for 11:55. Have I booked things too close together. I would hate to be in a late line for the little mermaid ride and miss my lunch date?

Do most people get right on the ride during the time specified or are there still wait times with this new fast pass system.

I think you will be just fine. If you get to your FP+ at 11 there should be no problem making it to your reservation at 11:55.

In the case of Journey of the Little Mermaid at MK, you won't have any difficulty.

That ride loads very quickly and does not have a heavy back-up, in general.
(That assumes there is not "breakdown" of the attraction, which is unlikely.)

All that said, I really don't think you will need to use one of the very precious 3 FP+ choices
for JoLM at all, anyway.
I'd pick an attraction that "NEEDS" a FP+.

You shouldn't have a problem with LM as long as you get in line at the beginning of your Fp window.

Last week, it took about 15 minutes to get to the first Fp+ tapstile at Star Tours. Rather than wait in line, I sat in the shade at Backlot Express and timed the line. After the line cleared, I walked up, tapped my pass and then walked to the next tapstile without stopping.

I don't recall seeing lines like this at LM.
