Are the EMH parks really that much more crowded?

In my experiences, MK always is. The other parks to me are always a 50/50 chance.

We went the first week of May and the first day there was an EMH MK day. Granted, it rained, but everything was practically a walk on. We had thought we would do 4 or 5 attractions that evening and we did so much more than we anticipated. So much more that we ended up leaving the park around 3:30 the next day (very crowded day). We also scheduled EMH nights for both Epcot and HS and almost everything was a walk on. I would do it again in a heartbeat.

They can be, that's for sure. It's kind of hit and miss, but I was at MK once on the "non-recommended" (i.e. EMH) day and it was much more crowded than the predicted 4.

EMH works great for that first extra hour and perhaps the next hour, but then you have EMH guests plus RD than late morning arrivals (plus many of those with am FP) so key is if planning to use EMN make sure you do so and take full advantage by being there right at EMH RD as that advantage will quickly disappear as crowds build my mid morning.

My experience is with evening EMH, not morning. I'm not a morning person unfortunately.
