Holidays Around the World includes several different holiday attractions at Epcot. There's a good description of it on the official web site: Holidays Around The World
You would need to plan for some things that happen only once or twice a day, such as the Christmas Tree Lighting and the Candlelight Processional. The Storytellers appear at rotating times throughout the day (times will be listed in the Epcot park guide you get at the gate that day) The Lights of Winter are not really an "attraction" per se; they are some special holiday lights that are also lit during the Christmas tree lighting. You just walk by and look at them whenever you can.
