Are ANY Counter Service Restaurants open LATE?

Our trip priority is fireworks. Thats #1 on my trip (next to quality family time of course). We go to Disney for Illuminations, and dont mind watching it all week. We do early meals so we can watch the Wishes and Illuminations. I like my "spot" up front for Illuminations. last year we got the fish and chips on at least one night before Illuminations. I wasnt impressed; too greasy.

Last year we tried booking our dining meals for lunch. (backwards) This was great for a few of the days, but we had trouble finding CS (counter service) options for evening hours.
Does anyone know any DEFINATES on CS options for late?
I know the Pop Century does late CS. How about other resorts?
Any counter service spots open late in the parks? (by late I mean 5-7 PM)

What time do most CS locations close?

Any help appreciated.

You could try the American Adventure Pavilion, or maybe the Electric Umbrella in Epcot.

I've gotten CS at both Tangerine Cafe and Boulangerie Pastry in Epcot, just before 9:00 Illuminations. And I've eaten at Casey's Corner in MK after Wishes (I think it was 9:00 that night)

Tahnks for the tips! I talked to a castmember today and they said theres a way to find it on Disney'd website. I'll try that too.
