Apple recipes needed!

Hi all! I took the kids to the orchard over the weekend to pick apples. We now have about 100 apples sitting in the kitchen so I need help. I am going to make a pie this afternoon but what else can I make?? Please keep in mind that I am not a cook so nothing complicated, please.

This wont be a recipe to follow step by step but a basic guide of what to do.
Take 8 peices of bread and cut diagonally. Then get 3 apples and cut then in half then thin slices. Put egg and milk in a bowl and mix together. Dip the bread in the mixture and put in a baking pan. Layer the bread, apple slices, and some raisins in the pan. Sprinkle cinnamon and brown sugar over it all and then pour the remaining egg and milk mixture over everything. Bake on 275 until golden brown and crispy.
 
I make up Apple Pecan Bread, using the BH&G recipe for apple (or zucchini bread). It has cinnamon and nutmeg in it and has a nice holiday taste. I just made up 4 loaves and froze 3 of them for the Christmas season. Will PM you!

ETA: Oh, dang, you can't get PMs. Well, my recipe is the zucchini bread recipe from the Better Homes and Gardens cookbook (red and white checkered one). If you don't have a BH&G cookbook, use any recipe you have for zucchini bread except replace the zucchini with shredded apple.
 

Just slice them and dress them like you would for an apple pie, add the cinnamon and sugar with the slices, then freeze them and you've got an instant apple pie! :) I do that with pears from our tree, they are so good!!!!

That's what I'll be doing that this week with the rest of our apples. I've frozen whole homemade apple pies in the past... they came out good but the crust was a little tough. So, this year, I'm making up the filling for the pie and then I'll be vacuuming sealing the filling. When it comes time for Thanksgiving or Christmas, I'll just whip up a fresh crust and thaw the filling for an easy homemade pie.
 
APPLE STRUDEL MUFFINS

INGREDIENTS
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
1 cup white sugar
2 eggs
1 1/4 teaspoons vanilla
1 1/2 cups chopped apples

1/3 cup packed brown sugar
1 tablespoon all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter

DIRECTIONS
1.Preheat oven to 375 degrees F (190 degrees C). Grease a 12 cup muffin pan.
2.In a medium bowl, mix flour, baking powder, baking soda and salt.
3.In a large bowl, beat together butter, sugar and eggs until smooth. Mix in vanilla. Stir in apples, and gradually blend in the flour mixture. Spoon the mixture into the prepared muffin pan.
4.In a small bowl, mix brown sugar, flour and cinnamon. Cut in butter until mixture is like coarse crumbs. Sprinkle over tops of mixture in muffin pan.
5.Bake 20 minutes in the preheated oven, or until a toothpick inserted in the center of a muffin comes out clean. Allow to sit 5 minutes before removing muffins from pan. Cool on a wire rack.

What a great idea! I never thought of that. Now I know what to do with all the apples my mom will be bringing me.
 
Apple Brownies 9 by 13 pan

2 sticks butter, soft
dash salt
2 cups sugar
4 eggs beaten, creme together
add 2 cups flour
1 tsp. baking soda
1 1/2 tsp cinnamon, mix.
stir in 2 cups diced apples
Bake 350 degrees for 40 to 50 minutes.


These are so good...better than they sound!!
 
This is the best apple crisp recipe I have ever made, and we are EXTREMELY picky when it comes to our crisp! ;)

10 cups all-purpose apples, peeled, cored and sliced
1 cup white sugar
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1/2 cup water

1 cup quick-cooking oats
1 cup all-purpose flour
1 cup packed brown sugar
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup butter, melted

DIRECTIONS
Preheat oven to 350 degrees F (175 degree C).
Place the sliced apples in a 9x13 inch pan. Mix the white sugar, 1 tablespoon flour and ground cinnamon together, and sprinkle over apples. Pour water evenly over all.
Combine the oats, 1 cup flour, brown sugar, baking powder, baking soda and melted butter together. Crumble evenly over the apple mixture.
Bake at 350 degrees F (175 degrees C) for about 45 minutes.

Please note! I do tend to cut down the sugar amount some myself; I like to taste the apple first along with the sweetness, ya know? Some people like it sweeter tho, so it's to your own taste. Also, I tend to make a double batch of the "crust" because the recipe above makes it pretty thin. Also to your own taste. :)
 
We always make fruit leather.

You just cut up the apples (you can peel, but I leave the skins on) and cook them in a big pot until mushy. (You can season them depending on what type you're going to make.) Cool them a bit and then run them through a food processor or blender. Cover cookie sheets with plastic wrap and pour on a thin layer of the apple mixture (try to get it as even as possible). Then dry them-- I set the cookie sheets on clothes racks in front of my wood/coal stove and they take about a day or so to dry, but you can also dry them in a very low oven for 8hrs or so.

I'll cook a big batch of the apples and then add other fruits that don't need to be cooked right into the food processor, so I wind up with more than one flavor. One of our favorites is strawberry-kiwi.

You can toss the little rolls into a ziplock bag and keep them in the fridge or freezer and they will last forever.
 
Thanks everyone, these all sound good. I made a bubble cake tonight - apples, brown sugar, raisins, an egg, some butter & canned biscuits. No measuring, just did it by memory from something we used to make when I was younger. It was yummy.

I love the Pioneer Woman website but that has almost 3 sticks of butter! I feel my rear inflating just reading that recipe but it looks so good!!

What kind of apples do you have? We are LOVING the Honey Crisp apples and did not know if they would freeze well. :goodvibes

The apple crisp sounds decilious!! Wish I would have had that when I wanted to make peach crisp!

hubby wants apple crisp, I have to try this recipe.. he is very picky about it...

We picked both Honey Crisp (YUM!) and Gala. I don't know about freezing them. I have a pretty small freezer and it is full already. I think that I will be trying some of these recipes and gifting people with goodies.
