Apple crisp recipes?

I made some apple crisp yesterday using my Betty Crocker recipe and I wasn't thrilled, it just seemed kind of blah (both the topping and the apples) and DD17 didn't care for it much either. I could taste too much of the nutmeg and I used Cortlands but even the apples didn't seem to have much flavor so I'm looking for a new recipe and apple suggestions!! :)
 
Here's a recipe my mom used to make from a Duncan Hines cake mix box and it was really good. Everyone gobbled it down when she made it.

6 med. apples, peeled, cored and thinly sliced (can use 2 cans apple pie filling)
1 cup water
1 pkg Duncan Hines white cake mix
1 cup firmly packed light brown sugar (can use half)
1/2 cup butter or margarine, melted
1 teaspoon ground cinnamon

Preheat oven to 350. Arrange apple slices in ungreased 13x9x2 pan. Pour water over top. Combine Cake mix, brown sugar, melted butter and cinnamon. Stir until blended. Sprinkle crumb mixture over apple slices. Bake at 350 for 50-55 minutes or until slightly browned and bubbly. Serve with ice cream or whipped topping.

I'm not too bright in the kitchen but I think I could manage this;) but I am not sure what you mean by can use half for the brown sugar(see told you I'm not too bright) Is this if you don't want it too sweet?

If you're using a sweeter apple, you can just use half a cup of brown sugar instead of 1 cup. My mother regularly used just half a cup... but when the apples were too tart, half a cup definitely didn't sweeten it enough!
 

For apple type, I like to use Jonathon, Braeburn, or Pink Lady. I have the best luck with the apples that come off my Grandpa's tree, but I don't know what kind they are and I don't think he'd be happy to look out his window and see people stealing them :lmao:

If I use the betty crocker recipe, I increase the apples by 50% (i.e. use 6 instead of 4), add extra cinnamon, and make sure to use real butter. I use quick-cooking oats-the other kind seem to end up chewy (which I don't like).

I'm going to try a different apple in my next batch but right now I only have macs and cortlands available locally, and I read somewhere else about mixing the apples with lemon juice and vanilla before putting them in the pan and cubing them instead of slicing them so I'm going to try those tips too. I always use real butter and the quick oats but extra cinnamon and less of the nutmeg would help, and adding extra apples as you suggested.
 
i have never used a cake mix.. and it is easy..

1 cup white sugar ( depends on the types of apples used.. i like granny smith so they are sour and i need some sweetness to the apple crisp
1 tblsp flour
1 teasp cinnamon


1 cup Oats
1 cup flour
1 cup baking soda
1 cup baking powder
1/2 cup melted butter


350 oven
slice apples and place in a 9 x 13 pan
Mix sugar, flour and cinnamon together and sprinkle over apples

Combine oats, flour, brown sugar. baking powder, baking soda together and then add melted butter . blend.. I have a son that likes the topping so I double the topping..crumble over apple stuff..

bake 350 for about 45 minutes..

we are wheat free so i use oat flour but all purpose will work..
