for a New Years Eve party. I’m looking for something new and delicious but no sweets please. I’m sugared out!
 
Would you be in a position to heat some up? I have a great recipe for a bride cheese dip! Just had it Sunday as a matter of fact! Let me see if I can find the link,or else I can type it in tomorrow. It has an apple, cranberries, cinnamon, butter and a little bit of brown sugar along with Brie cheese.

Baked Brie with Apples & Cranberries Recipe
INGREDIENTS
  • 1/2 cup apple, chopped
  • 1/4 cup natural almonds, sliced
  • 1/4 cup dried cranberries
  • 1 Tablespoon brown sugar, packed
  • 1/4 teaspoon Korintje cassia cinnamon
  • 1 Tablespoon butter or margarine, melted
  • 1 round (8 ounces) Brie cheese
    ADD ITEMS TO CART
PREPARATION INSTRUCTIONS
Preheat oven to 350F.

Coarsely chop apple with food processor. Combine apple, almonds, cranberries, brown sugar and cinnamon in small bowl and mix gently. Stir in butter just until ingredients are moistened.

Cut Brie in half horizontally. Place one half of Brie, rind side down, on pan. Spoon half of the apple mixture onto bottom half of Brie, spreading evenly. Top with remaining half of Brie, rind side up. Spoon remaining apple mixture over top. Bake 12-15 minutes, or until cheese is soft and just begins to melt. Serve with toasted French bread, apple wedges or assorted crackers.

Yield: 8 servings
HELPFUL HINTS
Brie is a French cheese known for its soft texture and downy, white rind. When preparing Brie, leave the rind on the cheese. The entire cheese is edible , including the rind.

Golden raisins or dried cherries can be substituted for dried cranberries, if desired.

Tomato dunk. All measurements are approximate:
2 baskets "baby" tomatoes (Santa Sweets, Cherubs, cherry tomatoes... you know what I mean)
2 or 3 tablespoons of minced sweet onion
2 or 3 garlic cloves, minced
Maybe 20 oily black olives (pitted- I get them at the grocery store on an olive bar)
Put all of this in a big ziplock bag and add some good olive oil, balsamic vinegar, some ground black pepper and maybe a teaspoon of sugar. You could shake on some dried basil or oregano if you want. Make sure there's enough oil/vinegar to coat all the tomatoes.
Pour all of this out on a foil-covered cookie sheet. Bake at 375-400 degrees for maybe 30 minutes, or until the tomatoes split and the "juices" thicken up a bit.
Put everything in a bowl and squoosh it up with a fork. Serve with toasted slices of baguette (I brush baguette slices with olive oil/garlic powder, then toast in the oven... or I buy them in the bakery section of the grocery store, already sliced/toasted if I'm short on time or lazy, LOL!), or sliced baguette (soft), crackers, etc.
 
vegetable bean dip

1 can blackeyed peas
1 can pinto beans
1 can black beans
1 can white shoepeg corn - I use whatever yellow or white

Add:
1 small jar pimento, diced and drained
1 medium onion, diced
1 large green pepper, diced
(may use yellow or red for color and flavor)
1 cup celery, diced

Bring the following to a boil and add to the above ingredients:
1 tsp salt
1/2 tsp pepper
1 Tbls. water
3/4 c cider vinegar
1/2 c vegetable oil
1 c sugar

Refrigerate and drain before serving.
Serve with Tostitos or Fritos Scoops.
If made a day ahead of time it is best.

Bruschetta with Gorgonzola Cheese and Honey


Ingredients
  • 36 slices (1/2-inch thick) baguette bread, about 1 loaf
  • 1/4 cup extra-virgin olive oil
  • 8 ounces Gorgonzola, sliced
  • 3 tablespoons honey

Preheat the oven to 400 degrees F.

Arrange the sliced baguette on a baking sheet. Brush with olive oil. Bake until the bread is pale golden and crisp, about 10 minutes.

Arrange the cheese on the toasts and bake until the cheese is melted, about 3 minutes.

Drizzle the toasts with honey. Place on a serving platter and serve immediately.
 
In a ninja, throw 1-12oz bag of cranberries, 1 or 2 jalapenos, scallions, cilantro, sugar, salt, lime juice. Blend up till chunky. Pour over a brick of cream cheese, or mix all together. Serve with crackers or tortilla chips.
 
Pizza bombs -

Take cresent rolls and put a few slices of pepperoni in there and 1/2 a stick of string cheese - fold up and put in a cupcake pan. Bake 400 until browned. Serve with a side of pizza sauce. Taken from pinterest and it was a huge hit at a party I had in the fall.

Also take a block of cream cheese, flatten down the middle of it, pour some carmel in the midde, top with nuts and put apple slices around the side. Very yummy!
 
I love this super simple Greek/ Feta dip. Just serve with a couple of crusty, sliced baguettes. Really yummy.


INGREDIENTS:
  • 2-3 tablespoons olive oil
  • 3-4 (about 1 1/2 cups) Roma tomatoes, chopped
  • 2 green onions or a bunch of chives, finely chopped (about 1/4 cup)
  • 8 ounces feta cheese
  • 2 teaspoons Greek seasoning
  • White or regular balsamic vinegar (optional)
  • Sliced baguette for serving
DIRECTIONS:
  1. Drizzle the olive oil over a plate or platter. Add the tomatoes and green onions or chives and crumble the feta cheese over the top. Sprinkle on the Greek seasoning and toss lightly to combine. Drizzle with balsamic vinegar, if using (just a teaspoon or so to start – add more to taste).
  2. Serve the dip with soft, sliced baguettes (pita chips are delicious, too).
 
These are always popular and easy to throw together ahead of time. I use Wishbone Robusto Italian dressing for the tortellini (use refrigerated, not frozen, yes it makes a difference.) Can sub whatever you have and feel go together. I use mozzerella and halved grape tomatoes instead of cheddar. Also lightly sprinkle extra dressing over the platter before serving.

Super easy spinach dip that is great - I serve it with Wheat Thins, but it could be served with most anything

1 container sour cream
1 pkg frozen, plain spinach
1 pkg powered ranch dressing mix.

Thaw the spinach and squeeze all the extra water out, mix it with the sour cream and ranch.
 
Prosciutto wrapped asparagus


Grill asparagus with olive oil and s&p to taste. Don’t over cook. U want them to still keep shape

Cool

Spread goat cheese on a piece of prosciutto and wrap around the stem of the asparagus.

Serve room temperature.
 
These are super simple and very popular. Everyone, from my food snob aunt to my meat-n-potatoes inlaws, loves them!

--1 pkg crescent dough
--1 pkg Boursin cheese, softened
--1/2 cup crumbled cooked bacon (optional)

Preheat oven to 375. Unroll crescent dough and go over it with a rolling pin to thin it out and fuse seams together. Spread Boursin evenly over dough and top with bacon crumbles, if using. Roll lengthwise, jellyroll-style. Cut into 1" pieces (kitchen shears work well for this) and place on an ungreased cookie sheet. Bake 13-15 minutes until golden brown. Makes about 24 rollups and they're good hot or room temperature.
 
I found this one online that sounded good. I plan on making it tomorrow for Bill and I.

• 1 lb boneless, skinless, chicken breasts • 1 lb bacon • 1 20 oz can Dole Pineapple Chunks in 100% Pineapple Juice • ¾ cup low-sodium Teriyaki sauce • ¾ cup brown sugar • toothpicks, soaked in water for at least an hour
Instructions
1. Cut chicken into bite-size pieces. 2. Drain the juice from the can of pineapple chunks. Cover and refrigerate the pineapple chunks until needed. 3. Combine the pineapple juice and teriyaki sauce in a large resealable plastic bag or bowl. 4. Add the chicken pieces. 5. Seal and refrigerate for one hour, turning the bag once. 6. Preheat oven to 350F. 7. Line a broiler pan with foil and spray with non-stick cooking spray.
8. Cut the strips of bacon into thirds. 9. Working in batches, wrap each piece of chicken with a strip of bacon and roll in brown sugar. 10. Push a toothpick through a pineapple chunk and then through the bacon-wrapped chicken. 11. Place on prepared broiler pan. 12. Bake for 20 to 25 minutes or until chicken is cooked through, turning chicken bites once. 13. Turn on broiler and broil for 2 to 3 minutes per side until bacon is nice and crispy. I left my pan on the middle rack so the toothpicks wouldn't burn. Always keep on eye on your food when using the broiler. Things happen fast! 14. Serve immediately!

I like simple -
french baguette cut into slices
put Gorgonzola cheese on the slices
heat in the oven til it melts
drizzle honey over it and serve

These are delicious and take no time to make.
 
I make an easy cheese ball with about equal parts brick cream cheese and shredded cheese. (You can shred your own or use the packaged if you're in a hurry. Cheddar is always a hit, but I've used Swiss, Gouda, pepper jack...pretty much anything.)

Take the cream cheese out to soften up a bit. Mix with the shredded cheese. Form into a ball (or log) and roll in whatever coating you like - crumbled bacon bits, chopped walnuts or pecans...(This year, we had a guest with a nut allergy, and I crushed up the French-fried onions you use for green bean casserole. - It was a big hit!) Serve with any crackers you like.

(Leftovers are great on bagels, too!)
 
Another cream cheese one -

Soften the cream cheese and spread it over a plate. Mix a can of tiny shrimp (drained) with cocktail sauce and pour over the top. - My mom always served this one with Triscuits, but I like Ritz as well.

I've also done this with crab meat instead of shrimp. Equally yummy!
 
It's too late now, but I've made a really good bacon-wrapped fresh jalapeno popper...very savory:)...
