I read that I can upgrade my ticket to an AP within 14 days of purchase even after I have used some of the days. Will this still be possible if I have used ALL the days?
 
Not if you wait until after your last park day.

As for whether or not you can do it DURING your last park day, I'll defer to those who have tried or done this.
 
I think the day you use the last day on the ticket is the last day you can upgrade.

You must upgrade before leaving the park on your last ticketed day. If there are no entitlements left on the ticket, they will not upgrade. Any reason you want to wait until the end of the trip? If you upgrade early in the trip, you'll be eligible for AP discounts.

TY for all the prompt responses. Unfortunately I waited because I was 100% sure we would not be back within the year, now I am 95% sure that I will be back within the month.
 
If you are a Resort Guest the "last day" rule does not apply. If you are not a Resort Guest and the 14 days has not been reached and you ask nicely at a Guest Relations there is the possibility that you will be allowed to do the upgrade. If it is done the price will be the difference between the gate price of your ticket and the gate price of an AP, and the expiration date of the AP will be one year from the date of first use of the ticket.

Oh drat.

Similar situation our first time to Universal. We knew we would be back to WDW inside the year so we upgraded to the AP. We did not realize how much we would absolutely LOVE Universal, and didn't budget for that. Next visit we knew better! :)
