I agree - somewhat. Read on:
Yesterday, I did ask about whether anything was available earlier in August (specifically, check in on the 8th for 9 nights). I expected the answer to be 'no," but was surprised to be told that both studios and two bedrooms were available for all those nights (in fact, if I'd been willing to switch rooms during the visit, I could have gotten a one bedroom for six of those nine nights).
Bottom line: I've heard availabilty during high season changes by the hour (e.g., people are continually cancelling and changing ressies), and now I believe it. I was probably just fortunate enough to call at the right time.
As it is, we actually preferred the later August date (our favorite time to vist WDW, in fact), because of the August school openings you mentioned (which by the way are not a national thing, the August openings skew heavily South and West; North and East still tend start after Labor Day). It's amazing how much less crowded things are once all those sunbelt families disappear.
