Anyone want to help plan my park days?

I am feeling quite unsure how to plan my days and hoping some of you who enjoy helping others plan will chime in. We bought 5 day non park hopper tickets and will add a sixth day while there if we decide we need it. Our trip is Sept 12-22. We arrive and check-in to WBC on the afternoon of the 12th. The 13th is DS8th birthday and we will go to HS as he loves SW (ADR 50s). The 19th is DD12th birthday and we will go to MK (ADR 1900 dinner). I know this is not the best park but a Monday mid Sept with a plan we are willing to do. So we need an E day, a AK day and another MK day. We are thinking with the heat we would like to rest in afternoon so hoping to miss the 7pm close of MK for the mnsshp. We leave on a 6am flight on the 22nd so planning the 21st to be a non park day.

Mon 9/12 Travel Day
Tue 9/13 DHS
Wed 9/14 MK PM EMH
Thu 9/15 OFF
Fri 9/16 EP
Sat 9/17 OFF
Sun 9/18 OFF
Mon 9/19 MK
Tue 9/20 AK
Wed 9/21 OFF
Thu 9/22 Travel Day

To me it seems you would want to go to the parks at least 6 maybe 7 days out of 9 possible days. I wouldn't let the fact you have an early flight on the 22nd sway you from the parks on 21st. You are going at the most optimal time crowd wise. I would add another day for Epcot for the F&W Festival. Its really not that much more money to add day 6 and 7 even if you only go for a half day.
