Anyone in here decorate cakes?

Those cupcakes are adorable!

I just finished this cake for my friend's DS's 5th birthday party which is in less than two hours! This cake has FALLEN OVER 3 times and has been BAKED TWICE!!!!! The "monster" was designed by the birthday boy: "Green monster, 5 horns, 4 eyes, and 2 teeth... teeth not fangs... fangs toooooo scary!" was the instructions I was given. Origanally the monster itself was almost two feet tall... but it took a nose dive... I tried a second version a little bit shorter and dowelled up the wazoo... but that one decided to jump from my dining room table as well. At 7pm last night I went back out to the store for more supplies and made a 10" round base and a much shorter monster. Boy... I hope they like it.

Can a fully baked, frosted, fondanted and decorated wedding cake be frozen???

Here is why...

A friend from work, who has waited a VERY long time to get married has finally set the date. A long time ago I promised her that I would do a cake for her wedding. Well, the date she chose conflicts with my upcoming DCL cruise. So, I was wondering if I could do the cake in advance and have her freeze it.

I hope it is possible. If not I suppose I can always just do one for her shower.....

I don't freeze fondanted cakes b/c I'm not sure what it would look like when defrosting b/c of the condensation...maybe someone else has experience with it? :confused3
 
I have refrigerated a fondant cake and it did have some condensation but I left it alone and didn't touch it for a few hours and it dried out fine. I think WHEN they want to unfreeze it would matter. If it is a hot & humid day, it would make more condensation.

If you did any intricate fondant designs, it might make them fall off or wilt.

How far before the wedding do you leave?
 

The wedding is May 5 and we leave for Florida on May 2.

How long will it "keep" if it were not frozen?

Here is my roses cake. My instructor said my roses were very good! I didn't want to write anything on it, I have messy handwriting. I think I'll get the press down thingy with the names on it (Happy Birthday...etc.)

I think your handwriting is nice!
And on the clowns I think they are really cute- and if you wrote something on it it would take up the "white" space. I think it is adorable. Great job!

Congratulations on your classes and cakes! I made good roses in class...not so good now, that is the one thing I have major trouble with (thank goodness I don't get a lot of requests for roses on cakes actually).

LJC, I would say if it was only a day or two that would be fine but 4 days is pushing it. If she really wants you to make it, try refrigerating rather than freezing. I have refrigerated a fondant cake with decoration before and it turned out fine.

When you write on a cake, move your whole arm and not just your wrist. It took me awhile to learn to do that but it really makes a huge difference in how my writing turns out. I don't have the cutest handwriting either.
 
:) Brenda - I think your cakes are great! Those clowns are very cute. I have never learned to make roses, or any other flower for that matter, with icing. Gum paste? No problem, but not icing. I have flower envy!
 
I prefer gumpaste but so many people around here want straight buttercream cakes and don't want to pay extra for gumpaste. Poo.

I've been working on my website. It isn't finished yet and I'm working on it daily but it is up and you can take a peek if you want, I'd love opinions.

Very nice! I like it, the color scheme is subtle, the info so far is easy to find and simply/clearly stated, and it's professional looking.

DH and I are working on our concept. It has nothing to do with extensive cake decorating and all to do with cupcakes! he's doing the research to see how we can get licensed and then we'll look at getting serious about it!! I've been slowly buying the big stuff if I find a good deal on eBay and storing it until I'm ready to open a bakery. I've been eyeing a few spots but I need to find out how expensive it would be to transform it. Many of the places around here are 100 year old buildings so we would have to update all of the electric.

I found a Blodgett convection oven on eBay in Peoria so it would only be a few hour drive to pick it up and the final bid was only $288!!!! It was near new and very clean. I missed the auction by 20 minutes. I could have freaking kicked myself...I DID kick myself.

you guys are so awesome with the sites. DH bought me a site, but we haven't put anything together yet.

Question, and this may have been asked before...do you all use doctored cake mix recipes, or do you bake from scratch? DH has told me that if I ever have a cake shop, I should bake from scratch...guess I should start experimenting now!
 
I do some scratch and some doctored. Some doctored recipes are out of this would delicious. Why not use it if it is outstanding?

I know some bakeries (even small boutique bakeries) use cake mix (not doctored). They buy the big food service bulk bags of water only cake mix and bake those with a little added oil to moisten. Ick.

I think if you have some yummy doctored mixes why not use them.

My wedding cake is doctored white mix and it is fall down smack your mama good. I suck at finding a good scratch white recipe. They just never turn out.
