Anyone else feel like there is too much BBQ/pulled pork showing up on Disney menus?

I know it is tasty and a family favorite, but it just seems like so many menus have some form of BBQ meal or at least topping (pulled pork on a burger, pulled pork on mac and cheese, yada, yada) available.

With so many restaurants now specializing in BBQ on property, why all the offerings at QS places, too? Is it really that popular? Just curious - I like BBQ but would only eat it once or twice during a Disney vacation.

Yes it's popular...and delicious LOL. It's also a way to add a layer of flavor not terribly expensively as you can use a lesser cut of meat and really work flavor into it by going the low-and-slow method of BBQing.

Things go through phases. You still see a lot of pork belly on menus too.
 

It's part of the American palate. Appeals to a lot of people. Meat=good value. Salty and sweet= good value.

It's like potatoes. They're filling, a "neutral" side that really only needs salt for flavoring. So restaurants give you a lot of fries. Because it's a side that costs them little but appeals to most Americans and also gives the illusion that you're getting your money's worth.
 
BBQ pork also can sit around for ages and not dry out/get tough/etc...combined with its current uber-cheapness (cheaper than chicken breast and way cheaper than beef) and it becomes the go-to option everywhere...
 
Most of the QS BBQ pork, and the stuff at Liberty Tree and Diamond Horseshoe, is standard food service bags. Flame Tree does their own, as do Whispering Canyon and Trail's End (I think on that latter).
 
Wow - I didn't even think about the "business" part of it, meaning it is typically cheaper cuts. Now it makes sense. I wasn't really focussed on it until more and more BBQ restaurants began filling up WDW: The Smoke House, The Polite Pig, Flame Tree BBQ, the new Food Truck at Fort Wilderness is kinda BBQ-y, Fairfax in HS is now BBQ heavy, Homecoming Florida Kitchen has many offerings. And as I said before, almost every QS has one BBQ meal.

That "bag o' shredded pork" is leaving a mental picture for me - LOL! That's why I shouldn't question anything. Sometimes I don't want to really know the answer!!

This was one of the better unexpected positives of our stay at the Wilderness Lodge. Getting to smell all those delicious smoked meats waft up to our balcony all hours of the day.

There's also a lot of braised beef short ribs on menus these days...which tastes good, but I do think it's there for the reasons you're saying. Also, there's very little last minute prep, so it probably saves on labor costs. Luckily these things do taste good.
