Any Great Recipes for Leftover Turkey?

Help! I ordered a BIG bird this year for Thanksgiving, and I'm afraid of getting stuck with lots of leftovers. Since my family will only eat so many turkey sandwiches, I was wondering if anyone out there has good ideas for using turkey leftovers? Any favorite family recipes? TIA and Happy Thanksgiving! :)
 
Sounds simple, but TURKEY SALAD, just like chicken salad. Some mayo, celery, a little onion, etc.

Cooking LIght had a great recipe for a turkey posole a few years back. It might be on their website. It was sort of a spicy stew with chipotles and hominy. It was awesome! Maybe I'll try and dig that recipe up so I can a) make it next week, and b)post it to share!
 

My granny makes a turkey and sausage gumbo, which is really good. You could make a turkey tetrazinni.
 
Defrost a loaf of frozen bread dough. Then roll it out to about 12 x 15 or so.
Spread with a package of softened cream cheese mixed with a can of green chiles.

Put chopped turkey on top, shredded cheddar cheese, black olives, a sprinkle of cumin and oregano.

Roll up like a jelly roll and seal edges.

Brush with beaten egg. Bake at 350 for about 20 minutes.

To serve, cut slices and serve with warmed, thinned out cream of chicken soup to dip.

This sounds yummy! I am trying to find my grandmother's recipe for turkey barley soup she made with leftovers after cooking her turkey. It was one of my childhood favorites. I will post it when I find it!.

Check Martha Stewart's website. I printed off a recipe the other day called Turkey and Vegetable Pilaf that was soooo easy and looked great! :)
 
I usually buy a 16-18 pound Turkey for the 3 of us. This year I had my choice of 12 pounders or 20+ pound Turkeys. I ended up with a 21 pound Turkey!!!

After Thanksgiving dinner I pull all the meat off the bones. I save enough for us to eat Turkey for another 3 days. Here's what I do with the remaining Turkey:

I Make a huge batch of Turkey pie filling (3-4 batches). I freeze the filling in ziplock bags. When I want a quick meal I defrost, mix up some bisquick, pop the dough on top of the filling and bake @350 for 45 minutes or until the biscuits are golden brown on top.

Also.....
I chop up Turkey and dump enough chicken broth (can never find Turkey broth) over the Turkey and freeze. I later use it for Turkey noodle soup (add more broth) OR......

Another recipe I like to make is to mix up some stuffing (it doesn't matter what brand). Spread the stuffing in a baking pan. Put Turkey (dump the broth after defrosting) and Brocolli spears on top of the stuffing. Mix a can of cream soup (Chicken, mushroom, whatever you like) with 1/2 cup milk and pour over the top. Sprinkle Moz. Cheese (I like Mont. Jack the best) on top and bake for 40-45 minutes (until the cheese is golden brown).

This gives me some quick meals for later.

After we have our fill of turkey sandwiches and turkey salad, we shred the remaining turkey and make it into turkey taquitos. Normally we dont eat them right away, we freeze them after we roll them and then fry them up when we are ready to eat them. Always yummy!
 
I have a recipe for a huge batch of burritos - you store them in the freezer and cook as many as you need. the recipe calls for 3 cups of cooked meat. I've used hamburger, pot roast, chicken, turkey, pork roast, and combos. because it's highly seasoned, it's a good way to use up dark meat if that isn't as popular. I don't have it handy, but will try to find it tomorrow.
 
Turkey Tetrazzini is my favorite for leftover turkey meat.

Thanks everybody! The turkey is in the oven as I type this! :cool1: Just checking back to get some ideas for the leftovers. I've added turkey tetrazinni to the menu for this weekend. Stacerita... Are turkey taquitos hard? Sounds yummy!
 
You can use up leftover turkey in place of ground beef in most meals.

For example:

Chop up the turkey (white and dark meat) and add to:

Spagetti sauce (instead of ground beef)
Tacos (stir in seasoning mix and a little water add turkey to fry pan and viola! add in your taco shells, cheese, lettuce and tomato)
Lasagna (layer noodles, cheese, turkey, sauce, vegetables, etc and bake)

Instead of chicken alfredo - use turkey! - some turkey, white sauce, (maybe a little broccoli depending on your family) some egg noodles and you are good to go!

Turkey bagel pizza - slice bagels, add a little pizza sauce, some turkey and other favourite toppings, some cheese on top - broil in the oven until bubbling and (again) voila! Also works well with english muffins or flattened buns.
 
i like to take all my leftovers and make a casserole....stuffing, potatos, veggies, and somewhere in between chop up the turkey and mix it with a lil less than a container of sour cream and a can of cream of chicken...and stick it in between the layers of everything else....and then i put biscuits on top and let them bake right on top of the casserole with some cheese...mmm i can't wait. you could even freeze it for a quick dinner.
