My potato soup came out too runny, how can I thicken it up? Should I add some instant potato flakes? Make more butter flour roux? Any advice?

Add some roux, but very little at a time. Too much and it can turn out too thick. Remember to use 1/2 flour and 1/2 butter. :)

Did you drain the potatoes after initially cooking them? That thickens it up.

I do what the pp said for this batch.
 

Make sure if you make a roux to let it get to the color of peanut butter, otherwise it's just flour and water. A properly made roux will add fabulous flavor to any sauce, soup, gumbo, etc.
