Another lovely day in Oklahoma. . .

Hi guys! Yes, I'm back too.

I have horror stories I could share about American Airlines....... the trip down AND back but I don't want to get my blood pressure going right now.

But seeing my little granddaughter, Vivian, was wayyyy cool and visiting with my son and his wife....just awesome. I'm still rather weepy cuz I miss them already and probably won't see any of them for awhile.:sad1:

Oklahoma was fantastic!!!!! Everyone (like you Willy) are so nice!!!
I'm glad to be back tho and talk to all my friends here on the DIS!

Glad you had a good trip aside from the airline. . . we missed ya Kitty! :)

Welcome back. Sorry your flights didn't go well, but I'm sure meeting baby Vivian was worth it. You'll need to start Skyping with them, so it won't feel like she's so far away. :)

Good morning Jo!

Happy Sunday! Here's a little something to start your day off right. .

I couldn't begin to compete with Willy's culinary skills, but I am making one killer batch of steel cut oats in the slow cooker. I just did a little taste test and it tastes like warm apple pie! I hope it still tastes this good when it's finished cooking. This will be my breakfast all this week. And if it tastes as good as it does right now, it might be for dessert a couple of times. :)

I would love to have the recipe, please! I have steel cut oats just sitting in the pantry because I'm uninspired to do something with them. I used to make them with coconut milk, brown sugar, and bananas, but I got tired of that. Apple pie sounds good!

Well it's not really a recipe, I just sort of wing it. I make the steel cut oats per package instructions, this batch was equal to 4 servings. I threw in a handful of dried cranberries, handful of raisins, chopped up an apple, a generous amount of cinnamon, a little vanilla, dash of nutmeg, dash of salt, and I sweetened with Splenda, set the crock pot on low for about 6 hours. When I warm it up the next day(s) for breakfast I'll add some milk and sprinkle some chopped pecans on top. Because this stuff will stick to the crock pot, I get a chunk of butter to rub on the bottom and sides of the pot before I throw everything in...and leave whatever's left of the butter to melt into the ingredients.

It's a hearty breakfast, you won't be hungry until lunchtime, and you may be tempted to skip lunch. It's got a lot of carbs, but with the fiber & fruit I think it's a reasonably healthy dish. BTW, the scent of this cooking in the crockpot will make your whole house smell like you've been baking all day. :)

That sounds amazing!! I need to try that. I eat Greek yogurt most mornings, but with cooler weather coming (I hope) that sounds perfect.

Just had my first serving from the batch made yesterday. It's good, but I didn't get that "Wow, this tastes just like apple pie" flavor I did yesterday when it was still cooking. Still with the apple/raisin/cinnamon combo it was pretty tasty. I don't think there's much you can do to oatmeal to screw it up too badly, sort of fun to try different things. Tempted to experiment with blueberries. :)
