Well it's not really a recipe, I just sort of wing it. I make the steel cut oats per package instructions, this batch was equal to 4 servings. I threw in a handful of dried cranberries, handful of raisins, chopped up an apple, a generous amount of cinnamon, a little vanilla, dash of nutmeg, dash of salt, and I sweetened with Splenda, set the crock pot on low for about 6 hours. When I warm it up the next day(s) for breakfast I'll add some milk and sprinkle some chopped pecans on top. Because this stuff will stick to the crock pot, I get a chunk of butter to rub on the bottom and sides of the pot before I throw everything in...and leave whatever's left of the butter to melt into the ingredients.
It's a hearty breakfast, you won't be hungry until lunchtime, and you may be tempted to skip lunch. It's got a lot of carbs, but with the fiber & fruit I think it's a reasonably healthy dish. BTW, the scent of this cooking in the crockpot will make your whole house smell like you've been baking all day.
