I make vegetarian chili with McCormicks seasoning too. Just use any fresh veggies you like instead of the meat. Cheap, easy and ready in under 30 minutes. It does taste better the next day however.
Quick quiche...mix 8 eggs with 1/2 cup milk and 1/2 cup pancake mix or Bisquick and 1/4 cup shredded cheese. Dump in pie plate and add whatever you like to it...chopped bacon, ham, broccoli, peppers, onions, etc. Bake 375 until it is set...about 30 minutes.
‘Boneless chicken breasts in crockpot....add bbq sauce or whatever seasonings you like. Cook for like 6 -8 hours and shred. Can use for wraps, pizza toppings, over salads, in quesadillas, etc..
‘Taco casseroles are good and teens probably like Doritos. Mix all the taco fixings like ground beef or turkey, black beans, jalapeños, rice, etc. Season and add crumbled Doritos to it and top with cheese. Bake till bubbly.
Ham and Potato Soup is good...peel and chop potatoes, cook in chicken broth, add in ham or bacon, make roux with a couple tablespoons butter, flour and cup of milk. Cook for few minutes and then add to soup. Can top each bowl with some shredded cheddar and green onions if you like. Tons of recipes for this. Best one I found was on Allrecipes called “delicous ham and potato soup”. They use water but I think the stock adds more flavor. Either works though.
Broccoli and cheddar soup is always a hit here. Same premise...chicken stock, roux, milk, broccoli and cheddar.
Three envelope pot roast is so good and easy too. I use chuck roast but even beef stew meat works. Brown meat then put in crockpot. In separate bowl mix one envelope ranch seasoning, brown gravy mix, and Italian dressing mix with a cup of water. Dump over meat and cook all day.
Overnight Breakfast strata is easy. Cube up bread and put in casserole dish, add in diced, ham, peppers, onions, bacon, etc. Then add about 8 eggs whisked with 1/2 cup milk. Refrigerate overnight and bake the next morning.
