Not to interrupt such friendly banter but...

Wasn't it this group that was discussing gravies a few weeks ago?

We don't normally make it, but Mrs. AA has asked me to find her a sausage gravy recipe.

I can find several on the 'Net, I'm sure, but it's always nice to have personal opinions.

I'm thinking Marsha had one she liked....

BTW, can y'all guess we are having breakfast for supper? :teeth:

Homemade biscuits, thick syrup to sop it in, eggs, bacon and/or sausage.

Alan is there room for one more at the table. Growing up, Friday nites was always breakfast for dinner night at my house.

Alan, no help with the gravy there... don't make that type much myself... but I know I had the discussion about gravies with someone... so it was either here or the Ya Ya thread. Btw, that dinner sounds *wonderful*

Southern Chocolate Gravy

Ingredients:

2 heaping tablespoons of cocoa
1 cup of sugar
3 tablespoons of flour
4 cups of milk
1 teaspoon of vanilla
1 tablespoon of butter

Mix the cocoa, flour, and the sugar in a pot with a fork or whisk until well blended. Add all of the other ingredients and bring to a boil, stirring .constantly, over medium heat. Continue cooking until the gravy is the desired thickness. Serve hot over cat head biscuits with lots of butter.

we are having left overs since it's just G an me.....I love left over roast w/mayo sandwichs!

Gosh Alan, I don't have a recipe for sausage gravy. I just brown the sausage and drain it. Then I stir in some flour and stir it around until it coats the meat and soaks up the rest of the grease. Then I gradually add milk, stirring a lot to keep out lumps and I add pepper. I cook it until it gets thick. Sorry I don't even have measurements. I'd be interested in other's recipes though. Maybe there is a secret to making it better.

Here are 2 chicken crockpot recipes. I don't have time for more than that and I promised I'd post today.

Crockpot homestyle chicken and stuffing
1 can cream of mushroom or cream of chicken soup
1/4 c. melted margarine
16 oz pkg frozen broccoli, corn and peppers
2 1/2 c. cubed cooked chicken (can use canned if you want)
8 oz pkg cornbread stuffing mix
1/4 c. water

Mix soup, margarine, and water. Add the vegetables, chicken and stuffing mix. Transfer to slow cooker. Cook low 5 to 6 hours or high 2 1/2 to 3 hours. Serves 6

Cream cheese crockpot chicken
1 frying chicken (I substitute boneless chicken breasts)
1 pkg Italian dressing mix, dry
1 can cream of chicken soup
8 oz cream cheese, softened (reduced fat works fine)
1/2 c. chicken broth
1 lg onion, chopped
minced garlic
potatoes, optional
rice or noodles, optional

If you are using chicken breasts, you can probably figure 3 or 4 for this recipe. I often do 6 or 8 and double the recipe.

Sprinkle chicken with dry salad dressing mix. Peel and slice potatoes onto the chicken if desired. Cover and cook 6 to 7 hours on low. About 45 minutes before done, saute the onion. Stir the remaining ingredients together for the sauce. Remove juices from the crockpot and pour the sauce over the chicken. Cover and let it get hot. If you didn't use potatoes in the recipe, you can serve this over rice or noodles.

Grrr... God help me from hurting my husband... I have had it with him playing on my computers and then breaking them because he is "fixing" them. Having no sound on my computer is NOT an option. He doesn't get why him breaking it so it doesn't work is a big deal to me. I know this is so minor, but he just doesn't listen to me... I can't deal with it this week.

I can't help with gravy recipes Alan but your dinner sure sounds good! ::yes:: Speaking of dinner, we actually had dinner tonight - first time all week. :rolleyes: Made chicken in the crockpot using Lars' recipe...and it was great!!

Hello all.....

kind of a quiet day around here...although I did have lunch with Sue and she says Hi to everyone.....I asked her if she was coming back to post and she said: well, I thought about it today...then I got busy doing something else...lol!

I took my kids to get their haircut tonight and found out that the girl who cuts my hair lost everything she owned in the flood. She lives in one of those prefab homes that look like a mobile home and she had 4 feet of water in her house. (there is a very small creek behind her home and it rose rather quickly). .......apparently she only had 30 mins to evacuate and get her pets out. You wouldnt believe the pics she had! It was so sad. They are doing a fundraiser for her at the hair salon and I think I might have my girl scouts do something for a service project for her also. It really makes you think about how lucky you are sometimes.

Star, I so agree... PC means just that!!! Every single time he touches anything on my computer he messes something up. Now I have the upmost confidence in him as a techie at his job, but not at home for some reason. He said he'd take care of something for me last night... teach me not to watch him ;) But I have sound back and he's downstairs on his machine playing a game :teeth:

Supper was great! The gravy (thanks Melissa) was a good consistanc..consistenc..it was thick enough :p

Next time though, we will use hotter sausage and a bit more pepper in the gravy.

And Star, Rebecca thought that the choc gravy sounded great. We'll try that too, and when it comes to biscuits I have no problems eating cat heads.

Now hog's head cheese is another matter!

I'm off to catch up the checkbook and work on a SS lesson...

Driver's Ed tonight..........DH worked late......Dylan & I went to the Olive Garden with my mother for dinner & then hung out with her for a few hours:D My father is out of town until the 5th of October helping his sister in NC.
 
you guys don't know what your missing!!

One delicacy that you might be able to find that is distinctly Southern is a biscuit. Mama would get out her lard and her baking soda and her Martha White flower and in a few minutes she’d lay out some of the best, biggest and flakiest biscuits you’ve ever seen or tasted. Cathead biscuits, so called because they were as big as a cat’s head --- God intended these biscuits to be covered with butter and cane syrup at breakfast and brown or chocolate gravy at dinner or supper.

Ingredients:

2 cups of flour
1/4 teaspoon of baking soda
2 teaspoons of baking powder
1 teaspoon of salt
5 tablespoons of lard or shortening
About 1 cup of buttermilk

Sift the dry ingredients together and cut in the lard or shortening. Add enough buttermilk to make a soft dough. Pinch off about a lemon sized ball of dough for each biscuit and pat out with your hands. Bake for 12 – 15 minutes at 450 degrees or until the tops are golden brown. Remove the biscuits form the oven and rub butter on the tops of the hot biscuits to coat.

I come from a Southern family..........I do enjoy a good biscuit!!! My Mom used to make something she called 'brown foamy syrup' anyone heard of that?? It was heavenly!!
