Can anyone tell me what time the finale for the American Idol Experience shows each day? Is it the last fast pass slot?

Depends on the time of year, but for your trip it should be 7pm.

6:40 was the latest they show for FP+. So do they not allow FP for the finale?

I've never FP the show but there is no 6:40 show. Sounds like they are asking you to arrive at 6:40 so they can let you in before the standby line is allowed in for the 7pm finale show.
