We are staying at the Swan & Dolphin for Food & Wine on Saturday and Kids Nite Out is booked. Does anyone have another sitting service for Disney they would recommend?

I don't know about a Disney service but have you tried Care.com ? I've used it in the Boston area.

I've seen Fairy Godmothers mentioned many times. But, I have no personal experience with any of the sitting services.
