I see on the Disney web site that we can bring 2 bottles of wine on board per adult..

For clarification, does that mean 2 bottles per port, or 2 bottles per time getting back on ship?

We’re embarking on the WBTA in a couple of weeks & wondering if I could get off, bring my 2 bottles on, drop them in our cabin & repeat the process?

The rule is per port. Whether you could get off and on a bunch of times with bottles each time and them not stop you, I really don't know. What I do know is that when you get back on, you hand them your KTTW card and your face comes up big on their display screen. Can they make notes on that like, "Brought on his two bottles," I don't know. But it is certainly a possibility. Thus, any other CM that scans your KTTW card after that would see it.
 
Here is DCL's policy:

Disney Cruise Line Guests 21 years and older may bring a maximum of 2 bottles of unopened wine or champagne (no larger than 750 ml) or 6 beers (no larger than 12 ounces) on board at the beginning of the voyage and at each port of call. These beverages must be packed in carry-on (not checked) bags or luggage.
 
If you want to bring extras back on, I would think you would have to drop it off as you would hard liquor, and they will store if for you until debarkation day, and you would be responsible for any duties and of course limits per customs. DH and I have thought about doing this with beer - we get off at Cozumel and go to Mega first thing and are usually back on the boat within an hour. We have never tried to bring more back the second time on shore. Didn't think it was worth trying for a couple 6 packs. We do however do this at each port. Right now I have a couple 6 packs of Caybrew beers (Cayman Island Brewery) that we are slowly enjoying until we can get back there to get more.

You can definitely check as much as you want. I thought the OP was talking about bringing extra bottles to consume on the ship. If you wish to bring them home, it is no problem, just like hard liquor you bring it on the ship, declare that you have it, and they give it back to you before you leave the ship on the last morning. We brought Tequilla and Rum home this was and are enjoying it. You can do the same with beer and wine if you'd like.
 
A DCL Med cruise is very port intensive with great wine at each stop...pace yourself.
