We have an evening flight home on our departure day. Would we still be allowed to use the pool on our departure day after we check out? Also, are there any bathrooms/showers/changing facilities in the pool area?

Yes you can still use the pool. The showers/bathroom/changing areas are down the hall from the food court at AKL.
