Our trip is last week of January. AK day is a Thursday, we have an 8am TH adr and park open is 9am.

I have booked fp+ for Safari, and then the Lion King and Nemo shows, because we don't do EE or Dinosaur, and there are really no other options to use the fp+ there for us. Anyways, the fp+ that I have booked have us at the 11am Lion King and 12pm Nemo shows. If the park is not crowded this day, we're there at what would be RD as our adr is pre-park, is it completely possible for us to hit Safari first thing, then the 10am Lion King show, then the 11am Nemo show, without using our fp?

Safari is just a few steps from TH.
You can walk right there and enter the queue about 9AM.

Lion King is a 3-5 minute walk from Safari exit.
Even if the Safari got delayed, you should be able to get into Lion King.

The only way to know for sure that day is to try it.

Lion King runs 30 minutes, but the walk to Nemo will take 10-15 minutes.
That's cutting it pretty close on trying to enter the 11AM Nemo.
Again, only way to know that day is to try it.

Regardless, if there is no need to use one or more a FP+ reservations, you can CHANGE them
that day.
For instance, a second ride on Safari might be fun... each trip on Safari is unique.
 
We did exactly this touring strategy in mid October. Our TH res was actually for 8:10, but we were still done by 9am. Booked it to the Safari just as the crowds were getting to it, were on by probably 9:15am, to the Lion King by 9:45, quick restroom break for some while others found seats. We ended up skipping Nemo (kids were melting down) but made it to the ride with time to enter if we wanted to

We hopped to MK after that and had FPs for all the headliners. Crowds were fairly moderate, I think AK ranked a 5 that day (and MK was an 7, so we were thankful for the FPs.)
