For snacks we usually just bring some swedish fish and other candy, however this time I also wanted to bring something more substantial for either breakfast right before the flight or on the plane. I've got some fruit snacks but I'm sure they are fine.

Can I bring nutrigrain bars? The only reason I'm not sure is because they are gooey in the middle and wasn't sure it that ran afoul of the liquid/gel rule.

Also we are bringing some microwave popcorn in the individually sealed packages. Can they go in my carryon too? I'll gladly put then in checked luggage but it would be easier if I could pack all my snacks together.

You won't have any trouble with anything you described. One guideline to remember is that (generally speaking) if it keeps its shape out of the container, it's probably fine. If it doesn't keep its shape, it's a liquid.
