Afternoon Strategy HELP

I am attending a conference the first week in April 2015 (week before Easter) which I am on my own for dinner (getting out around 5). I have 4 evenings to plan for. I am debating if I should eat in the parks or go to another resort (I am staying at the Swan).

I'd like some expert advice as to where I should focus where I should be making reservations (I read that the week I am going is extremely busy/crowded).

We really enjoyed Raglan Road at Downtown Disney. Other big hits for us have been Liberty Tree and the Plaza at MK.
