I've done this many times. DH and our toddler sat together and I sat across the row with the baby. Several reasons: first, the little one usually fell asleep and there's no way I could tend to our toddler; second, in case of an emergency, I would feel safer taking one child with DH taking the other .... have no idea how I'd handle both with masks etc; finally, why on earth should I have to care for two kids while DH gets to sit back and watch a movie!
I also always make a point to avoid bulkhead when travelling with the children. There's no where to put toys for the kids, snacks etc. No easily accessible tray for colouring, laying snacks on. Also, I'm not sure how it works for tvs that are generally on the back of the seat in front of you ... can you see them in bulkhead?
