ADR's at 180+10 onsite/offsite question

Good afternoon!
I am starting to plan our next trip, yippee!!!! I think we are going to do a split stay with the first half being onsite. Can I make my ADR's for 180+10 and get the whole trip booked or can I only make 180 plus as many onsite days then do each offsite day at rolling 180?

You can book at 180 days for the length of your onsite stay, up to 10 days.
