We are currently 4 nights at AoA and 4 nights at POR (thurs-thurs), what are the chances if we just can't make ourselves leave on Friday we could extend the reservation by a night or 2?

totally depends on your dates and how booked up the resorts are.

You may have to change rooms, depending on when you're going to be there.

If you have a package vs. a room-only reservation, you also may not be able to extend your stay under the package even if there are rooms available. Staying longer might require changing from a package to a room-only reservation for the additional nights, so dining plans, etc. might not be availble for the extra dates.

We tried this on our last trip and would have had to change resorts.

Things may have changed, but in 2000, we were literally on the bus back to AS (sports or movies...can't remember) to check out and head to MCO when we said, let's not go home yet. We stayed three more days and they were very accomodating...we did have APs that year, so we must have been on a room only reservation. We didn't even have to change rooms. I suppose if if is a very busy season you may have trouble, but otherwise you should be fine. Try checking the website (I know, I know) to see if they have availability in your resort for the days you are thinking about if its close.

I was successful in doing this a couple years ago during my last trip. Was staying a Pop and decided we wanted to stay another night. Of course we were there during value season so I guess there wasn't much chance they wouldn't have availability. We were on the free dining plan at the time and we got the extra entitlements for free as well. It just extended the package for a day. Made our trip!

Also, extended my POFQ stay by a day for next week doing the same thing just yesterday. This time it was the PSD package.

I've extended my stays a number of times. Lucky for me, I'm retired and driving to WDW. One time I was staying at POFQ and I had to switch to POR, not a big deal. Sometimes my stay was room-only with a Disney special rate, which was also extended. Sometimes I couldn't get the discount rate for the extra days but didn't have to change rooms. It all depends. However, if it's not a super-busy period at WDW, your chances for being extended are good. I would suggest if you're considering it, don't wait til the last day to approach the front desk about it. Give them a good chance to make room for you.

DH & I have done this 2x. In 2001 we added on to our honeymoon while already there with no problems. And in 2011 we arrived a day early to BC & added the day we arrived while there & during same trip sprained ankle @ Hollywood Studios so next day day stayed at hotel all say so we had 1 day of park hoppers left so added a day at end too. We got to stay in same room on both occasions with no problems. It never hurts to ask while there if considering it. :)
