We have added an extra day to our trip in July. It will be me , DH and
DS (14). We have FD and have upgraded to the DXDP. Day 1 will be travel day and we will not arrive to WL until late in the evening- so we will not use any credits this day. We will have 18 credits each.
So far I have:
Sun- travel
Mon- No ADRs yet
Tue- lunch @ Lecellier 2:05
Dinner @ Boma 7:05
Wed- Kona Cafe @ 9:15
San Angel Inn @ 3:10
Artist Point @ 8:40
Thu-Chefs de France @2:20
Narcoose @8:40
Fri- Crystal Palace @ 8:25
Raglan Road @ 1:00
Sat- Whispering Canyon Cafe @ 8:30
We will leave for home after breakfast.

yachtsman, captain's grille, california grill, citricos, grand floridian cafe, mama melrose :)

If Fantasmic is showing on that Mon, I'd do a Fantasmic dinner pkg. You have plenty of credits, so you could do Brown Derby that day.

Other options for that first night is the Luau over at the Poly or Mickey's BBQ or Hoop De Doo.

My suggestion would really depend on where you'll be on this day. But just a random list of restaurants we like that you haven't listed:

Boma for breakfast
Kona for dinner
California Grill - LOVE this one
Via Napoli or Tutto Italia (both are good to us)
WCC for dinner (the skillet is a LOT of food, which your DH and DS would probably enjoy. We thought the food was good. And the atmosphere is fun.)
WPE (I know you're on the DxDP but it's such good food!)

Although I haven't been to the following, I've heard good things about:
Tusker House
Kouzzina
Citricos
