ACTUAL start time for 60 day ADR?

The last couple of times we've gone to WDW, I got up for a 5 am (central) start time to make my ADRs60 days out . But yesterday I had an unrelated question on the phone and the cast member told me to try "any time after midnight" because that's when they do their maintenance, and then they just open them up. She said she does hers usually around 2 or 3 am est. Has anyone else run into this? I thought they opened right at 5 cst!

ADRs open at 6am EST online and 7am EST by phone.

I wonder if she was just talking about when things get added (like if they open up more seating or something)- I noticed a few days after I made my reservations that a bunch got added at BoG and CRT around 2 AM, but that was after I was within my 60 day window. Fairly sure there is no way to make a reservation more than exactly 60 days out from your first day
