I also prefer to cut the non textured cardstock. I do still use some textured, but it just doesn't cut as nice for me. I go through blades very quickly when textured or bling is involved.
Close ups or faces can be done as small as 3-1/2, full size ones, don't do less than 5. Even then the little pieces are a pain to work with. I think I made my Aladdin/Jasmine at 5-1/2 and I went crazy with them. This is where the Expression is a good thing. I think 6-1/2 to 7-1/2, depending on final width, is good for 12x12 pages. So stick with the close-up or icons for the 8x8 and those can be as small as 1-1/2 if they aren't too curvy.
