A Sensible Dinner - Pearlieq's Journal

Happy Friday! I have to keep junk out of the house too- it makes all the difference. DH has had the house all to himself for the week while I was out of town, and now I'm scared to see what might be lurking in my pantry. ;)

Have a great day!

Hi Pearlieq!

Just wanted to say hi and wish you a great healthy weekend! That is excellent that you are staying to your goals dealing with the stress of sick kitties. I am sending them good vibes too from me and my cat! :goodvibes

Bye for now,
Mike

Hiya Pearlie!

Sorry to hear that the kitties are sick! Arkhe went through a bout of upset tummy a while back and it was awful! I felt so sorry for him. :sad:

Good for you for getting back on track with food. I have just had to banish ice cream from my house. When I really want it, I go out to Cold Stone and get some. That way I don't eat a bunch of it every day which is what happens when it lives in my freezer. I've been making granita lately. I made watermelon last weekend for a barbecue and it was really, really good and super low in calories and fat! Let me know if you want the recipe.

Hang in there and have a good day!

Oh my goodness, yes, yes, yes I do! That sounds so yummy!

Here you go! It's fabulous!!

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Watermelon Granita
2 Pts. per serving
Makes 4 - 1 cup servings.
Ingredients
1 cup water
1/4 cup sugar
4 cup watermelon
2 tsp fresh lemon juice
Directions
1. Bring the water to a boil. Combine the water and sugar in a medium bowl. Stir until sugar is dissolved. Allow to cool; do not chill.
2.Combine the watermelon and lemon juice in a blender. Puree until smooth. Add the sugar water to the watermelon and mix well.
3. Pour into an 8 x 8-inch glass baking dish and place in the freezer. Freeze until ice begins to form, about 30 minutes. Stir with a fork. Return to the freezer, stirring and scraping the sides with a fork every 20 minutes, until a solid slush is formed, 2-3 hours. Or, freeze until solid and then scrape with a fork to form ice crystals. Spoon into champagne glasses to serve. Garnish with a sprig of fresh mint.
Note: To make it a cocktail, pour into a martini glass and add a shot of tequila or vodka. It adds points but is still pretty LC/LF.
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

I don't make mine this exact way. I have an electric ice cream maker so I put the mixture in that and let it spin until slushy. It only takes about 30 minutes that way. This method works also but it just takes time.

I don't have the calorie/fat breakdown but it's only 2 points for 1 serving which is pretty darn good. It's also very cool and refreshing and I love, love, love it!

Enjoy!!!

Good morning, Pearlieq! :flower:

It most definitely looks like you are headed in the right direction with your food again. I will bet that catching the kitties was a workout in itself. :rotfl2:

Hope you and your DH had fun last night, but not too much trouble. ;)

Have a great day! ::MickeyMo ::MickeyMo

Just a quick note to say I might be MIA for most of the weekend. Kitties aren't bouncing back as fast as we'd hoped, so we've got to talk to the vet again today.

Hope everyone has a great holiday weekend!

Good morning, Pearlieq! :flower:

I hope everything is going well with the kitties. Don't worry about us, we will be here when you get back from taking care of things.

Hope your weekend gets better. ::MickeyMo ::MickeyMo

7/3/05

--8:30am

--1 small piece spinach stuffed pizza

12:30pm

--1 cheeseburger
--1 oreo shake
--2 melon wedges

5:00pm

--2 cups broccoli
--1/2 cup carrots & pineapple
--3/4 cup chicken breast
--1/2 cup soba noodles
--1/2 cup peanut sauce
--1 1/4 scoops mango sorbet

We hit Stir Crazy for dinner after our movie (Me: Madagascar, which I really liked, and DH: War of the Worlds, which he didn't care for with the exception of Dakota Fanning). I am really in love with this restaurant--I got my stir fry without oil to make it even healthier. It was really great.

We finally got all of the rocks put out!!! It's kind of a trip that DH and I hauled 10,000 pounds of rocks between the two of us! It was such a relief (and a good workout) to finally get it done! Now all we have to do is put out the bags of sod to be picked up, sweep out the garage, and even out a few spots. And of course brush back loose pieces for the rest of our lives. :rolleyes: Oh well.

The cats seem to be bouncing back OK. No one's been sick in about 32 hours, but they don't seem like the special bland food they're going to be on for a couple of days. Also, Magellan has to take 3 meds. The Pepcid and Amoxil don't bother him too much, but he hates the Flagyl, which the vet said was bitter. I feel so bad for them, but hopefully it makes them better.

7:00pm

--1 sugar free popsicle

Hi just wondering how the kitties and you are doing. More you than anything. Dealing with anything sick is very tiring. Good job on the food intake. keep with it. talk to you later.

Happy 4th of July, Pearlieq! :goodvibes

Looks like your day turned out pretty good yesterday. Glad to hear that the kitties seem to be on the mend.

Have a good day! ::MickeyMo ::MickeyMo

Happy 4th! Glad your kitties are on the mend.

I also love stir-fry places...I always feel like I get a good dose of veggies! When we lived in Evanston, our favorite place was Flat Top Grill...they would throw your stir-fry on a plate of salad greens...so good!!!

Hi Pearlieq,

Just wanted to pop in and send some good vibes to you and the kitties!
Hope that they are feeling better and that you are having a good weekend!

Hi pearlique,
I've read sections of your journal, and have to applaud you for slugging away. I've been fighting my weight for over 30 years so I know how it goes. One thing I did notice, that may or may not be a help...I have found that diet products, other than diet cola, do not help me...basically I can eat them forever and I am still hungry. Have you tried switching to real yogurt, english muffins, cheese, etc...? One other thing...it really helps to always have a green salad fixed...when I'm hungry I put some in a bowl, add some protein...tuna, hard boiled egg, leftover meat, garbanzo or kidney beans, whatever I have...then salt and pepper, and red wine vinegar and olive oil. Yummy and gives your body lots of what it needs. I'm lazy, just use a bag salad plus fresh cucumber, red onion, and tomatoes. And finally...walk every day !!! The very best, cheapest exercise in the world !!!

Good morning Pearlieq! :flower:

Hope you had a good holiday. I hear you guys got some rain up that way. It was a very light rain here and was sprinkling when I was bbq'ing. But it didn't damper the fireworks.

Time for us to get back to losing the Disney way! ::MickeyMo ::MickeyMo

Hi pearlieq, Thought of you today and I and wishing you great vibes for today. Have a great day to you.

hi Pearlieq

hope your day is FAB and your diet even more FAB! ;)

KEEP SWIMMING and you CAN NOT go wrong! :fish: :)

Hi Pearlique, how are your cats doing? I hope they get feeling better. We've just recently acquired a cat. My 17 year old son snuck a 7 week old kitty into his bedroom. (Dh & I had gone to the Flower Power Concerts during this time.) It was there about 4 days before I realized we had a new roomate. Immediately, I ordered him to 'get rid of the cat'. However, by the next day I was totally in love. Keep us updated on how they are doing. :sunny:

7/5/05 - I'm back!

8:00am

--2 granola bars

11:00am

--2 oz reduced fat ruffles
--3 T onion dip
--2 granola bars

Oops. This is was not a great morning, but I think I've been able to "snap out of it" so to speak. I've been keeping myself busy around the house, to keep myself out of trouble and burn some energy. If I get hungry again later, I'll finish off the chicken/asparagus fritatta and then for dinner I'm making tortilla soup and baked potatoes with broccoli & cheese.

Thank you so much to everyone who stopped by! I really appreciate your concern and support.

So far, it looks like the kitties are going in the right direction. We're up to about 40 hours without anyone getting sick, and they're phasing back to their regular meals. Magellan seems to be taking his medicine OK--we found it's easiest to dissolve his yucky medicine and use the dropper to just squirt it into his mouth. Much easier than getting a rapidly-disintegrating piece of pill spit back at me over and over!

The weekend was a little rough, mostly because DH and I were bored out of our minds. We tried not to leave the cats too much, especially because they were eating every 2 hours, but being shut up in the house for 3 days, after already spending all day every day in the house, did not sit well. I ate more than I should have, mostly out of boredom and frustration. Oh well. Time to move on.

I need to head to the store--we have no fresh fruit and I'm running low on veggies. I've been going through my pantry this morning trying to figure out what I can make out of what I have. I'm kind of a stockpile buyer, so I have a lot of several things. Anyone have a great recipe that uses 12 cans of diced tomatoes?

1:15pm

--the last of the chicken/asparagus fritatta.

5:00pm

--8 white chocolate raspberry shortbread cookies
--1 glass skim milk

Yikes--I really did eat 8 of them, didn't I. They were pretty small (unfortunately very calorie-dense) and new and I just kept popping them in.

My mom has got a bad case of bronchitis, so I went to pick up some groceries and a perscription for her, and I saw the cookies at the store on sale. I've been eyeing them for weeks because they sounded good, but I didn't want to get a whole bag on my own, plus they were really expensive. Somehow this time I they jumped into the cart. I was planning to have a few, then leave the rest at my mom's for her and her roommate to eat. Well, a few turned into 8 :rolleyes: . At least I left the rest there!

6:00pm

--1 granola bar

Well, we can add granola bars to the list of things that don't come in the house anymore! Luckily dinner won't be for a while.

8:30pm

--Italian beef sandwich
--Large cheese fries
--1 piece chocolate cake

The funny thing is, even while I was eating this I knew it was "wrong". I still don't quite understand where all of my will/motivation has gone. The weight is creeping back on, which is terrifying. I'm not quite sure how to regroup and start over.

11:30pm

--1 light n' fit yogurt cup
--1 whole wheat english muffin
--2 t. peanut butter
--1 T. jam

First order of business--get to bed at a reasonable hour! The later I stay up, the more I snack!!!

12 cans of diced tomatoes?....hmmmmmmmm..........maybe a whole lotta salsa? :rotfl2:

Too bad the weekend was rough for you, but your spirits are high and you sound like you are ready to take on the next challenge. (Hopefully not a kitty challenge ;) )::MickeyMo ::MickeyMo
